I am looking to create a homebrew fighter subclass on here, where at higher levels the fighter can add their dexterity modifier as well as strength to the damage rolls (not attack roll). Or strength as well, if using a finesse weapon.

Have been experimenting but can't seem to get this set up, has anyone created anything similar or have a suggestion/work around?

I don’t think you can. Put it in as a plain text description and that can be changed manually on the character sheet using customization.
