What are you adding the modifier to? For a race it's easy as you just set one size larger than whatever size you set the race to, but for anything else it sadly isn't possible to dynamically set the correct size to one larger than whatever the player is, but there are some ways around it:
If what you're creating is a feat, you could set a prerequisite of a specific size, for example you could make one feat that's only for Medium characters only that sets their carrying capacity to Large, and another feat that's only for Large characters only (there are some homebrew races of this size) that sets them to Huge and so-on.
Alternatively for a sub-class trait or a feat you could use options to let the player select their current size, with each option setting the correct modifier for that size, requires the player to be honest but is the best "all-in-one" solution that we currently do I think.

Huh, I've never noticed that before, in that case I have no idea, you'd just have to try it and see, keeping in mind that it can take up to 20 minutes for saved changes to become active in a character sheet. You'll know if it works if you can go beyond your normal encumbrance limit (15 times Strength with basic encumbrance rules). If it doesn't work simply as a type and sub-type, you might need to set a fixed value as the "multiplier" though I'm not sure what that would be.

Either race or feat works, it's there in both places (but for a race, it can be easier just to set the subtype as the size that is one larger). The modifier is Carrying Capacity and the modifier subtype is the multiplier. In the fixed value section, add whatever you want your carrying capacity to be multiplied by. For one size larger, that would be 2.

What if your carrying capacity is 20*STR instead of the normal 15*STR? in your example you use 2 as a multiplier to double the capacity, but you can only enter whole numbers in the multiplier field. I'm honestly not going to lose a lot of sleep about it, but I am new to homebrew, and it isn't as intuitive to me as I would have hoped.
I tried this workaround with Huge and Gargantiuan, with multipliers of 4 and 8 respectively in the Fixed Value section. Anything higher than 2 in that field or anything larger than Large is treated as a 2 and Large respectively for Carrying Capacity calculations.
Or I missed something and don't understand what I missed.
I've just tried setting carrying capacity - large in the size racial trait and then having carrying capacity - multiplier - fixed value: 2 in the powerful build racial trait for a custom race and that seems to have done the trick where setting carrying capacity - huge in the powerful build didn't, so hopefully that will help you too :3

The options in carrying capacity size are:
Gargantuan
Huge
Large
Medium
Multiplier
Small
Tiny
