I don't think you can modify the damage dice of a weapon, staff or anything sadly. as for changing weapon properties, i don't know ho to remove one, but you can add the two handed property by going to Modifier -> weapon property -> Two-handed
Technically, 1 is also impossible. There is a modifier that will allow that character to use Cha for every attack they make with every magic weapon. Or the player can manually adjust their Hit and Damage modifiers for that particular weapon directly on their character sheet.
I am trying to create a magic staff that has the following properties:
1- Uses CHA as attack Stat (I have this figured out)
2- Does d10 Damage
3- Is not versatile
4- Has the Two-Handed property
For the life of me I cannot figure out how to do 2-4. any help is appreciated.
Thanks in advance-

2 is impossible, you would have to start with a different weapon that already does 1d10 damage.
3= Modifer: Ignore Weapon Property->Subtype: Versatile
4= Modifier: Weapon Propertty->Subtype: Two-Handed
