Leek changes forms and climbs the south east tower, spinning an intricate but sticky web that could be used like a ladder. Once at the top, Leek can see that the upper floors of this tower have collapsed to create a hollow silo at least thirty feet high. Dust, rubble, and broken glass cover the floor, and old worktables and bookshelves lie strewn to the south. In the middle of the room is a hulking beast that looks like a mangy bear with an owl’s head, asleep.
All that remains of the tower’s second floor is a jagged ledge, upon which sits a battered wooden chest that would be difficult to see from below, just a short distance away.
(You can use the Giant Spider's WEB ability once, to do what you asked. But if you want to use it in battle, you will have to roll a d6 to see if it recharges. You will also have to get a lot closer. If you want to do it stealthily, roll Stealth (for the spider))

The remainder of the party climbs up onto the wall. The owlbear below raises it's head and sniffs the air when the clump of webbing slams into the door.
Nearby is a chest, easily visible from this higher vantage point, but it would be well hidden when looking from below. Around past the owlbear tower is the remains of the second floor of this crumbling castle, which is now a rickety makeshift roof patched up here and there with primitive materials. There are several sections of the floor/roof that have collapsed, exposing the castle below. You would have to move up to those collapsed sections to look down.
When you move, you will have to make stealth checks or the owlbear will become aware of your presence.
The owlbear appears to be locked into the tower, for whatever reason. As an old gnome and a druid, you know that owlbears don't fly, else it would have escaped already. Also, as a druid, captivity of a beast like this should anger you, especially as you don't see any food or water down there.
Also, everything is pretty quiet at the moment. To the best of your ability, you figure that your presence has not been noticed. Battling the owlbear will definitely be noisy. Yet moving around without the owlbear noticing and possibly raising an alarm will also be difficult.
Gundren Rockseeker hired most of you to escort a wagon of mining materials to Phandalin with a promise for more 'relevant' jobs and contracts afterwards. He left early to attend to business while the slower wagon made its way.
Several days later, you came upon an ambush site on the Triboar Trail. You determined the dead horses in the road belonged to Gundren, who must have been captured. You followed tracks to a cave the inhabitants named 'Cragmaw Hideout'. While clearing the cave, you rescued Sildar Hallwinter, who told you he was Gundren's companion. Gundren was also kidnapped, but he was taken to a place called 'Cragmaw Castle' along with an important map.
With no idea of where Cragmaw Castle was, you finished your wagon escort job and asked around to find out a Druid by the name of Reidoth would likely know where 'Cragmaw Castle' would be. You traveled to Thundertree to meet this druid, who provided you with the directions needed.
You chose to approach the castle from the south-east, and arrive mid-day. Upon seeing the ruined castle, Leek proposed a top-down assault and changed forms to a Giant Spider to weave a web the party could use as a ladder. Once everyone on the top of the crumbled tower, you discovered two things:

At first Leek thought the owlbear was a foe to be dealt with, so he webbed the door to keep it trapped in the tower. Doing so woke the owlbear, who proceeded to sniff the air and look around.
Thinking of assaulting the owlbear from above, Leek came to the realization that the owlbear was probably a play thing, and assaulting it would cause an alarm that would alert the rest of the crumbling castle's residents.
You now find yourselves in the situation where moving without stealth would cause the owlbear to become aware of you and possibly become agitated or cry out, alerting the rest of the castle, or at least bringing someone to the tower to investigate.
What do you do?
(IF you do decide to approach it, I will honor Leek's 25 animal handling check. If you do not wish to pursue that course of action, I will allow Leek to remain in Giant Spider form.)

With the breeze beginning to toss her fiery red hair, Katerielle out of habit, once again checks her hair tie to make sure her pony tail is secure and her hair will not get in her way. Looking over the scene as Leek crawls about in spider form waking the Owlbear guard dog, she was once again taking her time working out how best she wanted to begin this dig...adventure. The impetuous gnome had already set things in motion once again. Well it was an annoyance but it was what thrilled her to be able to work with some of the younger lived races, they didn't sit around planning and in endless debate of the meaning of minutia. They acted! Very well she would be prepared to back his play.
Katerielle loads her light crossbow while taking a knee on the most secure section of wall she can place herself at. She looks out over the castle with a hint of a little smile in the thrill of the excitement.

I think the best bet we have is to start peppering this guy from up here! Can owlbears fly?

can I use animal handling to try and tame the beast? I would approach and give it food.
You can certainly try. Although trying to do it in Giant Spider form would make it more difficult, ie: disadvantage.
