OOC: Playing for Katerielle and Elila (come on guys!).
Katerielle moves into the cellar (To Z14) and casts Thorn Whip at the Nervous Ruffian.
Spell Attack: 25 Damage: 10
Elila runs down the stairs and seeing one prone ruffian and another still standing, engages with the one that is standing. Doing her best to not kill the man, she swings her longsword.
This post has potentially manipulated dice roll results.
Katerielle's thorn whip lands, piercing the Nervous Ruffian with thorns. The Nervous ruffian then gets pulled and falls the 15 feet to the cellar floor below.
Bludgeoning damage: 2
Elila now standing where the ruffian used to be, no longer has a target to swing her sword at.
The Nervous Ruffian, winded from the fall, stands up and attempts to flee the other way, yelling to his comrade, "Through the tunnel. Maybe the Nothic will stop them!"
The Loud Ruffian stands up and runs down the stairs, following his ally.
OOC: (Kitryn and Katerielle can both make attacks of opportunity, if they wish)
Recall Kled, move beside Leek. As thunderous as I can muster, say ""If you wish to perish continue to fight us. If you wish to live, you must surrender."", Gandalf scolding style!
So is there a way to knock out opponents in this system? We obviously want to keep one guy alive to 1. Question him. 2. Feed him to the Nothic.
How can we knock someone out?
Only melee attacks can do "non-lethal" damage, and only on the blow that brings them to zero HP. Whoever does the melee attack has to declare "I'm not killing him," or else it defaults to lethal damage. Attacks of Opportunity can be non-lethal if declared to be so.
I could attempt to throw an elbow in the Ruffians face and hopefully, it knocks him out without killing him.
An elbow to the face is an unarmed attack. If you hit, it does 1 + STR MOD damage. If you just use your sword and declare "non-lethal", you have a better chance of success, since your sword does more damage.

OOC: Actually, now that I think about it, you want them to sacrifice to the Nothic. So when you say" If you wish to live, you must surrender", that's kind of a lie. It should be a Deception roll, not a Persuasion. So your modifier goes from +1 to -1. Your total is 11.
These guys were never intent on fighting you. They want to escape. I'll say you cause one to hesitate, so he gets half movement on his turn. But neither of them is surrendering.
Kitryn swings at the fleeing ruffian, but the difficult terrain caused by Leeks spell catches her up as well, and she misses. She moves to catch up to the ruffian and attempts a tackle.
Well, Leek will make sure we have advantage here... II use my cantrip to snuff out their torches so they can no longer see (or whatever means they have for light.)
Both ruffians cry out in dismay when their light sources fail. "Get out, get out! Run!" The ruffians try to navigate in the dark (difficult terrain) by feel.
Elila can use a reaction to have an attack of opportunity (at disadvantage now that it is dark again) against either of the ruffians. You know from your last blow that the nervous ruffian is almost done for.

Can I attempt a grapple for opportunity vs a straight attack?

No. Attacks of Opportunity grants you one attack, not an attack action. Grappling requires an attack action.

I'll take a swing at my guy as he gets up.

Grappling is a contested Strength check. Roll Strength (Athletics).

Elila runs down the stairs and attempts an unarmed attack against the Nervous Ruffian.
Unarmed Attack: 23 Damage: 4
Elila lands a solid blow onto the ruffian's head, staggering him. The ruffian doesn't look like he could endure another.

Per Katerielle (via email), she will cast Thorn Whip again.
Katerielle causes another vine to sprout and it lashes out at the loud Ruffian:
Thorn Whip piercing Attack: 18 Damage: 6
The loud ruffian cries out as the thorns sink into his flesh and he then gets yanked off the stairs and slammed into the wall.
Leek seeks to disorient the ruffians by snuffing out their torches with his Druidcraft cantrip. The room goes dark.
Both ruffians cry out in dismay when their light sources fail. "Get out, get out! Run!" The ruffians try to navigate in the dark (difficult terrain) by feel.
