Sorry for making people wait, I have about the hours of spare time during the day.
Vicky, immediately terrified at the appearance of these hags, looks to find Veronica, and sees her running silloughette (Google won't correct me sorry). Vicky quickly gets herself into gear by wild shaping into a Giant Wolf Spider and using her 40 ft of movement to move towards the hags. She would ready an action but I must point out she used her action to become a massive spider. If Pebbles is so kind as to give me the chance to ready an action, know that I ready a bite (To hit 10, damage if hit 6, CON saving throw DC 11, 6 halved if succeeded)

Look at it! Beauty! A spoiler!
Look what you've done, spoiling it for you and everyone who can see this screen. You're a disgrace, you know that, right? You have nothing to be ashamed of but yourself, you moster!
But to be completely fair, every monster has a cute side, like have you seen people draw goblins? Goblins look so cool! You're fine, you may seem like a monster, but I bet you're cute on the inside!
This post has potentially manipulated dice roll results.
{DM Note: No worries, we're all busy with real life. Let's start Vicky in melee range and have her transformed and ready to go. You would have had time to prepare as the windmill was set on fire.}
Initiative count 22…
Inky blackness clouded the eldest hag’s eyes as it turned its gaze on the giant wolf spider that was Vicky (It casts Eyebite using one of their coven spell slots DC 15. Vicky’s Wisdom save: 4)
{DM Note: I forgot to mention 10 misses the Hag’s AC in the last reply. Also I’ve put Vicky where the hags can’t just run past her and at the ranged party members without triggering attacks of opportunity.}
Realizing her spell had no effect, the eldest hag (Hag 1) ordered the other two hags, “Curse them and kill them all!”
The other 2 hags, seeing how Vicky resisted their mother’s spell, lay into Vicky with their claws. (Giant Wolf Spider has AC 13, Vicky has AC 16)
Hag 2 (adv from flanking): 27 or 13 Damage: 9 slashing
Hag 3 (adv from flanking): 14 or 25 Damage: 13 slashing
Hag 2 critically hits for 14 damage, and Vicky transforms back into half-orc form (with 3 spillover damage), losing her wolf spider wild shape. Hag 3 hits for 13 damage, leaving Vicky with 19/35 Health.
Awaiting Veronica’s Turn…
{DM Note: You can still declare your actions out of turn, but I understand if you may not want to as this is not an easy encounter.}
Veronica would prefer not to leave the children alone... in a worst-case scenario, if the party were to lose to the hags, someone will need to get the children to safety!
She sets the children down and then peers around the corner, dart in hand that she intends to sink into hag 3...
Could Veronica possibly get advantage on the attack because the three hags are currently not looking in her direction? Or would that require a Stealth check (possibly with advantage because they're distracted)?
In any case, Veronica will use her bonus action to activate her eldritch claw tattoo to gain 15ft reach with unarmed strikes and do a bonus 1d6 force damage with them as well, in order to do some nasty stuff to any hag that gets too close to her and also try to keep them at a bit of a distance once they realize she's here.

Unhappy that the market got rid of individual purchases for one-off subclasses, magic items, and monsters?

{When Skanon's turn arrives}
A barely audible curse escaped Skanon as he saw the giant wolf spider get hit by two of the hags. When he sees it transform back into Vicky he tightens his grip on his grimoire before a faint hint of a smirk began to slowly creep to his lips. "I've been looking for just the reason to use this." He says just under his breath as he looks to Hag 2 again.
Skanon casts Toll the Dead, Hag 2 needs to make a DC 14 WIS saving throw or take 1 necrotic damage or 1 necrotic damage if she is missing any hit points.

{DM Note: Veronica is already hidden from the hags and has advantage on her first attack against them, she already rolled for stealth to scout out the third floor and rescue the children.
I'm going to be consistent and retroactively apply it for Garavon as well. He already rolled stealth, then missed with the bursting arrow which he should have rolled with advantage.
Hag 2 takes 16 piercing damage from Garavon's bursting arrow before it detonated and damaged everything in the windmill's ground floor. The creature emerged, badly hurt.
Veronica snuck out from behind the windmill, strange tattoos flowed down and out from her arms, lashing out to cross the 15-foot space between her and Hag 3.
{DM Note: Aaand I was about to finish rolling for Veronica, but I see the player rolling the dice as I am clicking the buttons in the game log, so I'm gonna let her finish...Don't forget your 1d6 force damage from empowering the eldritch claw tattoo}
Actually... I think Veronica will use her movement speed to get just close enough to smack hag 2 with an eldritch claw, then rush back so they can't see her (and, by extension, can't target her with a most spells unless they decide to leave their current position and provoke an AoO from Vicky)
On initiative count 18... Veronica darted forward and lashed out at Hag 2 from 15 feet away. Her Eldritch Claws connect with meaty thuds and the badly injured hag fell to the ground, gurgling its last. Veronica then darted back behind the windmill, using it as cover.
The hag coven was broken, and the inky blackness in the eldest hag's eyes faded (No longer has access to Eyebite).
On initiative count 12...
Skanon redirected Toll the Dead onto the next most injured hag (Hag 3), they seemed less affected by the dolorous chimes than they should be (Hags have advantage on saves against spells and other magical effects). Hag 3's Wisdom save with advantage (game log): 6+2=8 or 2+2=4
The hag reeled from Skanon's spell and took 5 necrotic damage.
On initiative count 11...
Ireena voluntarily reduces her initiative to 8 to allow Ismark to act first.
On initiative count 9...
Ismark pulled the trigger and fired his heavy crossbow once more: 10+3=13, only for Hag 3 to easily dodge the projectile, hissing in his general direction. Ismark saw Vicky getting injured and said, "Shit...I have to help her before they rip her to shreds. Stay here and use this!" He dropped his crossbow for Ireena and drew his long and shortswords, moving forward into the fray.
"But I don't know how to use..." Ireena protested.
"Just wind it up, point it at the uglies and fire!"
On initiative count 8...
Ireena did as her brother instructed, and used the crossbow to the best of her ability (no proficiency): 9+1=10, and the bolt missed by several feet above her target, clattering into the burning building behind the hags.
Garavon's Arcane shot struck one of the younger hag's eyes and the hag's head decayed from within. It fell to the ground, destroyed. Garavon closed some of the distance as his foe collapsed.
This post has potentially manipulated dice roll results.
Vicky, in intense pain from the hags' attacks, lashes out and will cast Flame Blade, hitting for 10 and damaging for 7.

The last remaining hag deflected Vicky’s attack and shrank away, clutching the black gem in its claws ever more protectively. It snarled, “You trick me, kill my daughters, and burn my home. Just who in the Abyss are you?” From its body language, you could see it was readying to escape at the first sign of further hostility. (It takes the Ready action and will trigger it if it sees an attack coming.)
{DM's Note: Typo on the last roll, it should say Vicky instead of Garavon}
This was a Night Hag, Garavon had fought this subspecies of hag before as a soldier of the Duke. The black gem in the hag's hand was a heartstone. It was useless to all other creatures except the hag and was what allowed the hag to escape into the Ethereal plane, becoming unassailable unless the pursuers had some way of interacting with the Ethereal plane.
{DM's note: Combat is paused until someone takes a hostile action. If the hag sees it coming, it will trigger its readied action and disappear into the Ethereal plane. Anyone can speak up in any order, or make further plans to prevent its escape.}
Could Veronica try to sneak up on the hag to get a drop on her and finish her off before she has a chance to react, since the hag has enemies on all side right now?

The hag looks too healthy to be finished off with an attack. You can try to hide from it with a stealth check opposed by the hag's perception roll, but it'll probably run if it spots you.
