Playing the Curse of Strahd and just killed the Sangzor. Can I do anything with the meat/hide/head/blood? First time playing dnd. I could make a trophy but I wanted to do something more practical.
When it comes to monster parts, pretty much the only guidance you're going to get will be from your DM. Usually, poisons can be extracted, hides can be tanned, and heads can be trophy-ificated, but even those things won't be touched on more than briefly in the books.

Very few monsters have parts that can expressly be used for something once slain. Even collecting dragon scales/hide for the couple of magic armors that use them is DM discretion, not a fixed mechanic. You can try asking the DM if you want, but typically they’ll draw attention to any loot they want you to have from an encounter. Using pieces of a slain creature is more a video game mechanic than a TTRPG one.
Well, a sangzor is just a beast, not a monstrosity or anything, so it likely has no magical properties. All I could find on a quick search was the statblock for it, not any description or anything. Judging by that it’s very similar to a giant goat, so if you’re looking for something practical you could probably eat it. Very few animals are actually poisonous, so it should be safe. It might not taste very good, but it shouldn’t kill you or anything. And bones, horns/tusks/antlers can all be used to make stuff from jewelry to tools or weapons. What kinds of tool proficiencies does your character have?
