I don't think Aquatic Elves have been officially presented yet - in any printed sources or Unearthed Arcana.
If you need to use them, an easy and relatively balanced way to emulate them is to get a [race]Wood Elf[/race] and substitute their Mask of the Wild trait with the Aquatic Adaptation described in Alter Self.
First edition had them I know but it hasn't been carried over to the current edition. The Sinister Secret of Saltmarsh 3 module campaign featured one as an NPC.
Most previous editions had them. I was referring to 5th. :p
Come to think of it, I suppose you could search in the DM's Guild. Someone's more defined representation, or conversion from a previous edition, could suit your needs.
So, I noticed this too. The MM entry for the Sahaguin specifically mentions the Aquatic Elves, in that they are ancient enemies that have an ongoing struggle with one another, but they don't appear anywhere as either classes or as monsters.
Then, in volo's, the Tritons are described as an advanced, cultured and ancient society with a long-running struggle with the Sahaguin. Sounds familiar, right? I'm wondering if the Tritons have kind of been retrofitted into the role previously occupied by Aquatic Elves. Have the Tritons supplanted the aquatic elves? And/or, would it be sufficient to just re-skin the Tritons to have pointy ears and call 'em aquatic elves anyway?

I don't think that was their intent as in previous versions both aquatic elves and tritons were represented and distinct separate races. Lacking anything official you can of course work it however you like in your campaign :)
Aquatic Elves and Half-Elves are mentioned in the Sword Coast Adventurer's Guide, but it doesn't give full stats.
There's full stats for variant half-elves of aquatic heritage. They can forego Skill Versatility for a swimming speed of 30 feet (or Keen Senses, which any variant half-elf can take regardless of its particular heritage.)
Since the half-elf variants inherit the same trait as their full elf lineage, aquatic elves should have the same swimming speed. The Forgotten Realms Wiki also says they breathe water, which makes sense since SCAG says they're "found in the oceans of the world," and "they have been at war with the sahuagin throughout their history." Those two traits should be plenty for a subrace, considering all the traits elves get by default and how useful a swimming speed is. It's also consistent with Tritons and Water Genasi, who also have the Amphibious and 30' swim speeds.
The only thing missing would be a +1 Ability Score Increase (CON?) and some variation of Elf Weapon Training (which every other elf sub-race has). Probably more based on spears and tridents than swords.
Today's Unearthed Arcana contains stats for four elf subraces, including sea elves. They're basically what I posted earlier plus they know the Aquan language and can communicate simple ideas with fish.
