I can't keep straight the hundreds of Forgotten Realms gods, and having my characters worship Greek or Norse gods doesn't feel right, so in my homebrew world I created the following pantheon. Super simple, easy to remember, and distinct enough for interesting interactions and mythology.
The Pentatheon

Domains: Light, Tempest, War Paladin Oaths: Heroism, Vengeance Alignment: Neutral Holy Symbol: Sunburst inside a cloud
Hearthmatron
Domains: Life, Nature, Unity Paladin Oath: Redemption Alignment: Good Holy Symbol: Hand cupping a flower
Lawbringer
Domains: Forge, Knowledge, Order Paladin Oaths: Devotion, Crown Alignment: Lawful Holy Symbol: Crossed pair of hammers
Domains: Nature, Trickery Paladin Oaths: The Ancients Alignment: Chaotic Holy Symbol: Crescent moon with antlers
There's also a god called Lorekeeper, but the Pentatheon just pretends he doesn't exist... he's a mortal wizard who unlocked the secret of godhood and is the god of the Arcana domain. Luckily for the other gods, he has no interest in usurping their positions or sharing forbidden knowledge, has few clerics, and instead just uses his god powers to create his own paradise for himself.

Do your deities have histories with each other, with other deities, with mortals, etc? (I might swear that some of the stories of official deities are as convoluted as those novellas my parents watched when I was a kid.) What are the deities' origins if known and the folk tales surrounding them if any? Do they manifest in a typical shape in their plane or when they visit the material plane as an avatar or some such?

Human. Male. Possibly. Don't be a divider. My characters' backgrounds are written like instruction manuals rather than stories. My opinion and preferences don't mean you're wrong. I am 99.7603% convinced that the digital dice are messing with me. I roll high when nobody's looking and low when anyone else can see.🎲 “It's a bit early to be thinking about an epitaph. No?” will be my epitaph.
My homebrew pantheon is heavily influenced by MTG and Pathfinder, but there is a hidden deity I've been saving for much later.
In my campaigns history (not it's lore the player would never find this out) the old world was cast into darkness by the dying of the sun and the gods of light and in that moment a powerful goddess who owed a favor to the creator of that plane consumed all the darkness could touch and transported them to a new plane by way of the shadows. The people of my campaign setting assumed the universe was ending and warped out using powerful magic, forever being separated from the rest of their kind. They live on on a world far from the established multiverse, but the goddess has now grown so powerful she rules a dimension accessible from all shadows and darkness. She is not malicious but her existence, a secret for the people of the world, has begun spawning maddening cults to an unknowable black void.
She is referred to as the "void" in these cults, though currently goes by the name of Demiroth. She was formerly a neutrally aligned goddess of torment, punishment, and darkness who int he old world pantheons was responsible for the imprisonment and punishment of the most heinous souls whereupon she would feed on their evil essence which kept her immortal.

The Nameless Masque maker

Domains: Life, Death, Knowledge, Arcana Paladin Oaths: Takes no paladins Alignment: Unknown Holy Symbol: lower part of a humanoid head with open mouth with humanoid teeth dripping a liquid

Born under the watch of something from the furthest corners of the far realms.... It knows all.... it sees all... and it asks: "What is it that you want to see?"... and my answer is... ALL"
My podcast started as a funny one shot, so my cleric player said she was a worshiper of "Queen Bae". When we started the normal campaign we molded that idea into an actual deity focusing on family, helping those in need, and bringing low those who need humility. Her symbol is a honeycomb or bee, and tea and lemons are important in rituals as well as in life. She's distant but loving, and only directly interacted when my player reached a high enough level to have Raise Dead as an option, as during that long rest told her in a dream about a mission she needed to go on for diamonds. It's been fun to work with a player to create their own deity.
That melded over into Beyond Heroes, where my cleric started worshiping Pelor but switched for story and world saving reasons to worshiping the Phoenix. While normally a primordial would make more sense as a Warlock patron, it's been fun to mold that relationship to work for a cleric. We're less concerned with fitting the Phoenix into an established pantheon and more working out their personality, goals, and edicts. I've pulled their holy symbol from the original sketch of the Phoenix artwork, and resurrection and destruction are the two main domains for obvious reasons.
Simple GOD character for a massive multiverse setting. An all-powerful, but not all-knowing dwarf. He is the servant to the actual rulers of the multiverse, and he is known as G.O.D, or the Generally Omnipresent Dwarf, since he is always around.
Fun side note, for some reason, he sounds like Gilbert Gottfried.
