What are the umbrella terms for magics that restore things back to their natural states, and magics of the polar opposite e.g. magics that distort, warp or corrupt reality or the nature of something.
Dispel Magic is the go-to spell for undoing magical stuff. Remove Curse is for curses. Certain things like petrification require Greater Restoration. Other things are basically irreversible.
There's no unifying school of magic for it.

Wish and Wish
As a serious answer, look for spells tagged Healing for ones that restore things, like Lesser Restoration and Regenerate
Transmutation for distort/corrupt with spells like Alter Self, Create or Destroy Water, Disintegrate, and Flesh To Stone
