I just get them to roll for dexterity and add their proficiency bonus. Never even knew there was the long and drawn out way of using the tools from your inventory

Yep. All the text is there, not some random page in the 3rd most used book. Change the stat as needed.
Proficient in Wisdom(Perception) checks but you're looking for a lock? Expertise in Wisdom(Thieves' Tools) is better! Did your character suck at high school Intelligence(History), Ant-man knew extreme cold worked on that old style safe with a Intelligence(Thieves' Tools) check. Just change the ability to match the check.
This works for all the tool proficiencies and having those extra mechanics right there in front of you keeps those abilities top of mind. Tinker's Tools, Land or Sea vehicles, Disguise Kit. All skill checks that the ability can be changed on the fly and there's a place for all of the text!

You can add a custom skill in the skills section for thieves tools. You can choose to make it proficient and even put expertise on the custom skill
You can also roll any skill on your sheet that you're proficient in and uses the right stat. (If you have one.)
