A four-class multiclass that takes forever to turn on...but at 20th level the Feywarden outrangers the ranger, outfighters the fighter, outrogues the rogue, and has enough primal, druidic magic to glue it all together. It's kind of dumb, because it's such a basic concept... but I'd be interested in playing a level 17 Champion Fighter/Level 3 Bear Totem Barbarian. Basically I like the idea of critting on an 18-20, being able to reckless attack to have constant advantage, two action surges, and resistance to nearly all types of damage. Fighter gives enough ASI's that I could comfortably grab Great Weapon Master and Polearm Master and just stroll into combat as a living Wheat Thresher.
I feel like the build might be a bit boring for a long campaign, but for a level 20 One-Shot it would be fun to just go completely sick-house on whatever huge beasty the DM bought a mini for and is desperate to use, which is why I assume they're running a level 20 one-shot in the first place.

As for the topic at hand, any class really. Straight lvl 20. Just because it'd be lvl 20 in a single class. Though since it's a one-shot, probably a class I don't particularly enjoy playing for an entire, regular campaign. Monk and Barbarian are at the top of that list.
College of Lore Bard. Knows a little about everything, has every skill, most of them they are good at, and few they have expertise in so nobody can do it better. They can talk their way out of almost anything. Bards make the single most useful class to have as the party Face, can can cast Cleric spells, and Wizard spells, sneak like a Rogue, and use Bardic Inspiration to let people pull off difficulty class target numbers they couldn't have otherwise reached with a roll of 20.
For a level 20 Bard, helping other people pull off the nearly impossible is routine.
Probably some kind of spell caster, to play around with those high level spells I'd never get in most normal campaigns. Honestly though I don't really have a specific idea in mind. I'm sure I could come up with some if I was invited to such a one shot but my head's already full of ideas for more characters than I'm ever likely to get to play. So the concept of getting to play a level 20 one out the gate doesn't do much for inspiration on its own.

I joined a high level CoS game and rolled a Long Death monk along this sort of reasoning. I think it’d be terribly dull to play for a whole campaign and a bit of a slog through mid levels but, at 17, I started with most of the cool goodies a monk brings to the table. It’s definitely far from the most powerful thing I could have made (I rolled but declined to play an Ancients pally that was just gross by comparison) but it’s been fun and should stay fun enough for the remaining short time I’ll play him.
I would love to play a 20th level Moon Druid. A full caster who can live in Elemental form and regenerate back to full HP as a bonus action every turn? Sign me up!

Crush magic jar, have 20th level wizard capabilities and magic resistance in a CR < 20 legendary monster with legendary saves.
