Does anyone know how to separate equipment being help on our mounts? I know i can have a mount in the extra's area but i am unsure how to equip it with things as well as keeping it's inventory out of my own so that the system doesn't say i am encumbered. same thing for cart items.
One trick I have learned is to pick a few items and modify them to become custom items using the description. You can modify your mount to give him zero weight and then list the items your mount carries in the description.
I have learned that this is a very good habit for your backpack. Modify your backpack to include the weight of all the items listed in it, and then list the items in the item description. In this way, when you don't have your backpack with you, you and your DM know what equipment you have sitting back at your room or on a cart with your mule, or whatever.
Now, consumables should probably stay as individual items even if they are in your pack normally. This way, when that candle runs out you can delete it from your inventory. But your bedroll, mess lit, fire starter kit, ... can all be listed under Backpack.

As said, just change the weight to zero for items not on you or in a bag of holding. It's been said that they're working on an inventory system that will do this for you, but until then that's the only option. I rename everything with "Z" in front of it to drop them all to the bottom of my inventory. Bag of Holding items have a "Zb.", so "Crowbar" becomes "Zb.Crowbar". Cart item would be "Zc.Crowbar", etc. It's not much of a hassle once you get it set up. Easier on a computer than on a tablet or phone, though.
You can indeed set the weights to 0 in the inventory. They are working on “inventory enhancements” to handle that stuff properly. In the meantime I use emojis to organize things by location because the system automatically alphabetizes the inventory like this:
