so, it is entirely possible for me as an 5th level sorcerer to spend all five of my sorcery points to create an additional 3rd level spell slot, and then immediately burn all my 1st and 2nd level spell slots for more sorcery points to be spent on more 3rd level spell slots, thus giving me an entire 5 spell slots of third level, but not a single sorcery point or spell slot not of 3rd level left. Is there an scenario, such as when playing an divine soul necromancer, where this strategy of only using 3rd level spell slots is actually viable or worthwhile, or is the idea itself too silly of a gimmick to work properly?

It honestly depends on the circumstances IMO. I would never start the day by changing all of my slots to 3rd level like that, but like JayDan said, if you end up fighting a goblin army, it might be worth it. I'd just do it on the fly, as needed, instead of prepping it that way.
You don't want to pre-emptively convert your slots into points.
First, every time you do that, you're taking losses. For example, turning a 1st level slot into points only gives you 1 point, but it takes 2 points to create a new 1st level slot. That 1st level slot is literally worth half as much once you decide to turn it into points. The game's designers did this on purpose precisely to discourage you from trading in all of your lower level slots in favor of higher level slots. Second, sometimes a higher level slot is overkill and you could've gotten the job done with a lower level slot, but you already traded them all in!
You should convert your slots into points at the last possible moment, if (and only if) you'll get more value out of the sorcery points than you would've from using those slots to cast spells. But since the conversion is inefficient, that's a pretty high bar to meet. You can usually get more mileage out of two 2nd level slots and one 1st level slot than a single 3rd level slot.
It depends on the type of game you are playing and your character. Is there a reason you don't want to use your Metamagic? I run a divine soul. I do more damage in combat than any of my companions without creating more spells slots. The most I have done is convert spell slots to points when I run out and need to Heighten a spell.
so what about the idea of using this to like, have a bunch of skeletons becuase god gave you sorcery and you are going to use that sorcery to animate the dead instead of healing the party? bad idea?

I personally wouldn't do that, because it turns you into a one-trick pony without any additional options. If you use *no* spells other than animate dead, you have precious few fall backs.
Now, with that said, even if you don't use all your spell slots to animate dead, you don't *have* to heal your party. If that's not what you want to do, then don't learn those spells. Nobody blames the barbarian for not healing them; it's a character choice. Follow your bliss, as Jeremy Crawford is fond of saying.

I guess that all depends on how many Fireballs it takes to get to the Tootsie Roll center of the BBE. Have you asked Mr. Owl, the Warlock?
I can't see doing that for Fireball. Unfortunately most of the time Fireball is used at most once a day (unless you have sculpt spell.).
I can see doing that for Counterspell. VERY easy to end up in a situation where the Big Bad guy is casting more powerful spells than you can and your best use is to counter.

except the villain can just use counterspell on your counterspell, maaking it nessesary for you to use subtle spell on your conterspell, wich for an 5th level sorcerer means a single spell slot less. Oh yeah and in this situation its nice to have guidance or an bard nearby, plus maybe enhance abillity?

At fifth level, that's a lot of fireballs. So maybe if you're fighting like... 100 1 hp dudes. A goblin army?

Not all villains have counterspell. Druids, Clerics, etc. make fine villains without counterspell.
