I just had a few questions about the legistics of pulling off multiclassing from a rouge to a warlock.
For example, would I add Assassinate and Sneak Attack damage to a non-weapon attack, like Eldritch Blast or Guiding Bolt(my warlock patron is a celestial)?
also, any ideas of making this character a more interesting and overall more fun travel companion to the rest of the party? the rouge is the assassin architype, a human, and only has one of his original arms, and the other is a prosthetic (mishap with a mimic).
I just wanted a little guidence from the community. Thanks and may you all roll well!

You'd need 13 dex and 13 cha to multiclass a rogue/warlock. Sneak attack only adds to weapons with the finesse or ranged properties. It does not add to spells outside of possibly Booming Blade or Green-Flame Blade.
Assassinate requires an attack roll for all of it and surprise for the auto-crit. Talk to your DM about whether spell casting eliminates surprise.
Spell casting doesn't eliminate surprise, see Surprise for how the first round of combat works when the DM decides that one or more combatants is surprised (TLDR: a surprised combatant just can't take actions, moves, or reactions in their first round of combat, and is considered surprised until the end of that first round). But as Jhfffan said, please note that Sneak Attack does require a weapon attack,and specifically a finesse or ranged one at that.

Assassinate
Starting at 3rd level, you are at your deadliest when you get the drop on your enemies. You have advantage on attack rolls against any creature that hasn’t taken a turn in the combat yet. In addition, any hit you score against a creature that is surprised is a critical hit.
As long as you focus on creatures that haven't had a turn yet, those creatures are still surprised. ANY hit you score against a creature that is surprised is a critical hit. The only difference between the magic missile scenario and Eldritch Blast is that you have a single roll with advantage instead of multiple rolls with advantage, similar to extra attack. There is a decent chance that a sneak attack from a decently progressed would still net more damage at a given level, particularly with the auto crit, but the spells with attack rolls will still work.
Eldritch Blast maxes at 4 beams meaning a total of 4d10. That's an average of 22 damage with a min of 4 and a max of 40. Crits bump those numbers to 8/44/80 at 17th level. That can increase by charisma modifier with agonizing blast. By contrast, a pure classed rogue wielding a longbow or a rapier (d8) can make a single attack with a minimum of 6, average of 22, and a maximum of 38 (all plus dexterity modifier) at level 9. Those crits are 12, 44, & 76 (plus modifier). A shortbow/shortsword (d6) can get 6/21/36 normal 12/42/72 crit at 9.

I think the only reason to take an Eldritch Blast assassinate versus a Sneak Attack assassinate would be a range thing... It can also be used (at higher levels) to hit multiple targets at once, although I don't know how useful that will be unless you're trying to take out a group of small weak enemies right off the bat.

Overkill doesn't matter in this game (that I can think of) meaning that Eldritch Blast would be better against 2-4 smaller creatures and sneak attack would be better against a single, larger foe. You'd have to consider what everyone else has, since a sorcerer could drop a fireball on the group of smaller creatures and potentially take out more. A fighter or a paladin might be able to take out the same larger creature with one attack. It's all dependent on the situation. That's part of the reason why I cringe when people say that you have a much better option with X ability than with Y ability because each has their use.
