They are mainly for a companion since they can go invisible you can use them in many different ways than combat

are there female sprites? or is a female sprite a pixie and a male pixie a sprite? are sprites and pixies variations of the same race, like high elves and drow, or are they not related?

The sprite's Invisibility skill states. The sprite magically turns invisible until it attacks or casts a spell, or until its concentration ends (as if concentrating on a spell). 

I'm guessing that a warlock with a sprite familiar can have it use the help action every turn without it losing invisibility?

Good use of the sprite is to have it

• ready a help action set to trigger just before the rogue of the party attacks - enabling sneak attack and advantage on the first attack.
• act as the scout of the party
• Have it become the personality detector through the use of it's Heart Seers feature
• have it concoct toxins, unguents, antidotes, and poisons as part of their Poison Brewers feature.

i would say yes, i would rule that a pact use of find familiar is different in the way that it can actually be the creature

I will say, sprites are one of my favorite critters.

That's a fun idea!

Can easily imagine one of these insisting "I am not cute! >:(" in a high pitched voice.

Can Sprites hover ?  It says that they have a fly speed but doesn't specify whether or not they hover.

 Any warlock can get this as a familiar if they choose pact of the chain.

 That is up to the DM, but the wings look most similar to insect wings so I would say they can.
