In a low level game, I'm thinking about using these as an environmental hazard over a goblin camp so the players can shoot down the hive and make the bees attack the goblins. How does that sound?

a demon in my campaign bleeds wasps.
that happens in legend of zelda: breath of the wild. you can shoot the bee's nest and they will fall on the goblins and attack them.

I know (from personal experience) that these things should be Chaotic Evil.
Wasps can be a serious pain if you lace them in hiding spots or room cupboards throughout the campaign.
One of my homebrew magic items is a potion of bees - you drink it and can transform into a swarm of bees (i use the stats of a wasp swarm)
my main question is why do they not have a poison effect?
Honestly they should have multiattack. But maybe why they don’t is that they do 10 points of damage on a hit. This might represent 10 stings at one hit point each, which to me is realistic. Also why immunity to paralyzation and stunned? Wasps can be stunned if you hit one with a newspaper. They might be paralyzed with a poison gas.
My group of level 3 players found out how a swarm of Wasp can take you down and out of a fight. The ranger got critical hit with 28 piercing damage.

That's more than a little horrifying.
Where is the poison damage? If this is a swarm of wasps or bees, there should be also poison damage because of their venom.
Yeah, if Giant wasps have poison to keep a victim alive but paralyzed, and swarm of centipedes the same; then I'm definitely homebrewing that into swarm of wasps.
Given that WotC put their attack as a bite, rather than a sting, I'm putting it down to a simple copy/paste oversight when creating SoW, missed in the editting process.

Uh, don't you mean sting?
The reason is you can swat a single hornet and stun it but if you swing it at an entire swarm you shouldn't be able to stun all 100-200 wasps at once.
