If this is the case, the only options you have to edit a weapon are to change its To Hit (by either overriding it or changing bonuses), Damage bonus, Cost and weight overrides, The option to dual-wield it, make it silvered, or adamantine. Then you can change its name and description. There is nothing about changing the damage type or die.
Are you making a homebrewed weapon?
There is currently no way to create mundane equipment within dnd beyond homebrewer so I would recommend that you make sure that you are in fact selecting the correct weapon and not the default one. Any weapon homebrewed will be displayed as a Magic Item.
Are you creating a Custom Action on the character sheet?
If this is the case then everything should be working just fine for you, as it seems to be working just fine for me. That being said, you are not able to assign properties like versatile if you create a custom action like this.

Gotcha. I just wanted to make sure that you were not trying to make a homebrew weapon and then putting a standard version of the weapon in your inventory.
What you have said is true, yeah. You can not change the base stats of a weapon. It is a limitation within the system with the idea being that the magic item would add something to the base. This is why I wish we could create homebrew mundane equipment but it is unfortunately not an option currently.
I'm making magic weapons and all the options I mentioned are options within homebrew. They just don't get reflected. I also just noticed that if a weapon gives you a feat the system doesn't actually reflect that either you have to manually add the feat.
I don't know what you are working on anymore. If I create a homebrew item with a base weapon there is no option to adjust the things you have said. You can add modifiers, conditions, and spells but there is nothing that allows you to change the base item.
I will also mention that a lot of the time changes made to homebrew take some extra time to update on the character sheet as the homebrew needs to update internally within the dndbeyond servers then get updated on the character sheet. The wait time is usually 20 minutes or so depending on website traffic.

Go look at the modifier options. There are options to over ride the base weapon such as change damage type and the damage die. There is also an option to ignore a weapons properties and add properties. Idk where the confusion is. Changing something is a modification and they are options under add a modification. They just don't appear to actually work. That's why in my original post I asked them to fix it because it has been a complaint on multiple threads since 2018.

You can add or remove weapon properties using modifiers, yes. You can change the damage type of a weapon using modifiers, yes. You can't change the damage dice of a weapon, no.
I am unsure why the first two are not working for you.
After you add anything to, change anything on, or remove anything from any homebrew, you MUST re-save the entire thing using the main [SAVE CHANGES] button under Basic Information or the system won’t pick up your changes. It can then take up to 20 minutes for those changes to push through to the character builder/sheet.
