Stormknight, can you please show me the rule that state that you have to choose between Natural Armor of 17 for your monk tortle and "Unarmored defense" or explain where this interpretation comes from?
The Tortle's natural armour is an AC Calculation (AC = 17) - as is the Monk's Unarmoured Defence (AC = 10 + Dex + Wis). With that knowledge:
adding to that... unless it says you have a BONUS which do stacks. it is probably AC calculations and those do not stack.
so mage armor, unarmored defense from monk or barb, sorcerer draconic natural armor all do not stack has they are all AC calculations formulas. and formulas can only be 1 active at a time.
an example of bonus stacking... Wizard Bladesinging. the blade song specifies that it gives a "BONUS" to armor class equal to your intellect. thus it stacks with any formula calculations.
so let's say you had a Monk Wizard with 20 dexterity, 20 intellect and 20 wisdom. you could have monk unarmored defense of 20 + blade song adding another 5 to your AC. making you having an AC of 25. add haste for another 2. as the haste gives you a bonus. and then have shield from wizard spell which is also a bonus and you have now 32 AC and then now you could ask your cleric friend to put shield of faith on you too. for another 2 bonus.
a shield equipped gives you a bonus to AC. aka not a calculation.
conclusion... if it doesn't use the word BONUS, then it is a calculation and you can only have 1 of those active at a time.

I know that is an option, just pointing out it is still not calculating correctly. (And as an aside, I wish AC Customization actually allowed you to make formulas that work - I want to set it and forget it.)
Also, I wasn't sure of the interpretation of the rule for Tortle Monk's AC when I started my build and figured DnDBeyond "would know" and when it didn't work the way I thought, then had to dig up rue interpretations and find these threads to realize DnDBeyond "is wrong."
It's been an issue for 3.5yrs according to the time of the first post in this thread. At this point it's probably easier to work around than expect it to get fixed.

It's probably easiest to just use the Customize -> Override AC option and add a note that says "Unarmoured Defense"

In my experience, the best way to get development teams to fix bugs is to have customers continue to complain about an issue.
