I'm attached to the Nothic for their lore and abilities. Creepy, full of mystery, and can magically taunt the players with trauma from their backstory.
There’s a lot I’m very fond of, but if I had to choose one type I’d go with Sorrowsworn. I’ve always been fascinated with entities that are your inner demons come to life. I’m trying to find a way to expand there role in my setting to being an existential recurring threat.
I love mephits. They're one of the lowest level monsters that can use magic on you, but for most of them, the magic is more annoying than harmful. This makes them great bonus enemies in a fight against a big bad melee attacker. The big dude hits the player characters, while 2 or 3 mephits dart in and out of combat, deploying their breath weapons and spells to target groups of players, then flying to the back ranks to attack the magic users. They force tactical combat with a choice: do I keep hitting the major threat or do I deal with these weak enemies that are chipping away at the HP and concentration of the spellcasters?
Anything old school that sounds like it came out of a long “session” in the seventies. Carrion crawler. Gelatinous Cube. Owlbear. Mimic. Displacer Beast. Beholder. Flumph. Iron Golem.
Anything from a classic module that makes you go “whut?”
Gelatinous Cube I think. I was so mad but also laughing recently when my plasmoid character was the one in the party to walk right into one. There's a lot of really good monsters but this is the first one that pops into my mind.

Nothing out of the ordinary for walking into a cube, I just enjoyed the irony of the ooze player character being the one to walk into the ooze monster. I got right out of it on my turn.
I just like them in general. They're simple, iconic, unique, and make for fun surprises.
