I read there's currently no way to simply remove/delete proficiencies or languages directly from inside the character sheet. But is there a way to create a homebrew feat or item that would remove or replace a proficiency or language? If so, does anyone know how to do that?
Info: I'm currently building my character for my group's next campaign. Ranger 9 / Rogue 1. For my character it doesn't make sense to have proficiency with Thieves' Tools, nor know Thieves' Cant. My DM is letting me replace those.
For racial profs and languages: Buy Tasha's. Use Tasha Options to replace proficiencies and languages with other ones.
For everything else: nothing you can do.

I can't figure out how to use custom origin to build exactly what I want. Is it supposed to be totally flexible and I'm not understanding, or are there limitations? All I want to do is trade one language for one tool proficiency

You can usually swap features, languages, or proficiencies if the builder allows overriding defaults.
