What would the "new world" technology look like? I was thinking the "old world" magi-tech would be more steampunk Victorian-style, with crashed dirigibles and broken-down clockwork golems being dotted around the land. As for the 'new world', I'm at a loss for ideas.

Ooh; I like that combination; makes the two easily identifiable at a glance. Then again: I'm just a sucker for the Steampunk design aesthetic to begin with.
What if, in addition to the regular races being gone, so are the regular animals, plants, and basically everything? Sort of like Athas, with weird creatures becoming normal.

All through the world travels wondering troops of goblins. They are entertainers, acrobats and bards. Their reputation is of thieves or scoundrels. The truth there are few who remember the old stories as well as they do. Or the nature beyond the edge of the maps.

What if rats went extinct and some other creature became the vermin and the hated creatures . A favorite animal in my campaign was these massive raccoons that were like 4 feet tall and 6 feet long , They would drag garbage cans behind them.

I like this idea! However, the warmer climate of the world might make it less ideal for a mammal to substitute the role of vermin. Perhaps some kind of lizard, like a skink?

I have a friend who owns a skink and there cool . I could see skinks becoming a vermin creature.
I like the idea of a inn somewhere infested with skinks, and when the party tries to catch one, their tail falls off and they scurry under the floorboards.

You could have a high-class group of legendary figures that saved the most of these races from such a calamity that are put in such a good light that people don’t recognize that they’re actually obviously evil.

After a while, I came up with ideas for new unusual creatures to replace the common livestock!
Cows, as established before, are Giant Turtles.
Chicken is instead scorpion.
Pigs would instead be either giant toads or giant bats. I think either would work.
