First, you should know that the Bonus - Attack modifiers you listed will apply to all attacks of that type, not just the weapon to which you're attaching the modifier. They are more typically used by class features, such as fighting styles, or by a magic item that buffs that particular type of attack in general.
The usual modifier for magic +x weapons is Bonus - Magic, which applies to both the attack and damage roll.
I was concerned about that. I am trying to set it so it only adds +1 to the attack roll and not the damage roll. I am assuming I could add a damage modifier of -1 to strip away the Magic +1 bonus after the fact?

That will only put a note next to the damage roll that says “+ -1” on the character sheet. The player would still have to manually adjust the weapon to subtract 1 damage from it on their character sheet. There is no functional way to make a weapon that only adds a bonus to the attack roll and not the damage roll.
Melee Weapon Attack, Weapon Attack, and Magic (or Ranged Weapon Attack, Ranged Attack, etc)
Does the Melee Weapon Attack add a +1 (assuming I am setting the value at 1) to the attack roll only and not the damage?
If so, what does Weapon Attack modify? Seems we need some tooltips on these to better define what exactly each value changes.
Could someone help clarify? Much appreciated!
I'm creating a Mithral weapon that only adds +1 to attack rolls but counts as a Magic Weapon for the purposes of overcoming resistance.
