I'm creating a subclass for Blood Hunter that casts spells, I'm having trouble being able to add spell lots and the ability to pick your spells. I would like to treat it like a Hexblade, I just don't know how to add the ability and it's frustrating.
My recommendation would be to make a copy of an existing subclass that grants spellcasting like you're aiming to add it (Arcane Trickster or Eldritch Knight for regular spellcasting, the Blood Hunter subclass with spells for pact magic) and see what that subclass is doing to create that effect. Then you can replicate it on your homebrew.
I can't believe it was that simple to rename the class feature as "Spellcasting". Drove me nuts, as I was unable to revert back to a previous version, and my subclass was almost debunked by wording in a free form field. Thanks Thaumaturgist.
No, don’t set it to ”half,” that’s not even a thing.
Select a “Spellcasting Ability” and set “Can Cast Spells” to “Yes.” Add either an “Additional Spell List,” or add a select list of spells under “additional specific spells.” Leave both “spell prepare type” and “knows all spells” as blank, those don’t affect subclasses like these at all.
Is there any way to edit the amount of spells learned and spell slots?
No, there is absolutely no possible way to affect the number of spells learned, the number of spell slots, nor to change them from “learned” to “prepared.” All you can do is add the exact same Spellcasting progression that the EK and AT get.

oops, yeah. I meant, set it to yes, than set "spell prepare type" to half.

Don’t set that to half, it won’t do anything useful for you. “Half” is for base class Spellcasting on Paladins, we cannot access those base class features.
1/3 casters like EK/AT are not “half casters.” In addition, they do not “prepare” spells at all, they only “learn” spells. Setting that to “half” will at best do absolutely nothing at all, and at worst cause something behind the scenes to get wonky.
Let me repeat: “Leave both “spell prepare type” and “knows all spells” as blank.”
Is there anyway to add the same amount of spell slots that Wizards get to something like a Blood Hunter subclass?
No. There’s not even a way to add any spell slots to a Blood Hunter, only Pact Magic currently, and only as much as the Profane Soul gets.
As for adding spell slots to Fighters, Rogues, Monks, or Barbarians, we can only add the same Spellcasting subclass feature that Arcane Tricksters and Eldritch Knights get.

Name the feature "spellcasting"
Where is the "feature" located at? I've enabled everything that asks about spellcasting.

I got it! Thank you for your help!
Class features - add a class feature. Name it "spellcasting" or "pact magic" whichever you are wanting.

Am I really stupid or something? I really can not get this to work for me -_-

Caleb did you find an answer to this?
What if I can't access Arcane Trickster or Eldritch Knight?
Under "can cast spells", set it to half
