About initiative, what I think we'll do is you can declare what action you will take out-of-order, and I'll try to resolve what happens in my reply (re-targeting attacks if the original target is dead and things like that.)
Someone asked about unarmed attacks, because they want their character to bite enemies. I'm going to allow unarmed attacks to do 1d4+(str or dex) damage rather than the default 1+str, I don't think that will be overpowered or anything (most weapons and cantrips do more than that) and since we don't have any monks that's not stepping on anyone's toes.
I'm down for a D&D Beyond campaign, although I have no clue what that will entail on the players' end, haha! Is it just a means to have reference to the story, or is it a different play style?
Oh, the DND campaign on beyond just holds all our character sheets so that we could look at them and so that DM can easily find them all.

Quick question, how does the combat movement work in a PBP (ex: character moves 30 ft. forward)? It sounds like we have no use for a digital tabletop like Roll20, so I'm a little confused.
It's often theater of the mind in pbp. Even irl, not everyone uses a battlemap. Sometimes in my pbp, I'll include a map with some positions, but often it seems like fights happen in close quarters anyway, where you can always at least walk up to the enemies or reach them with a ranged attack. This is up to DM though.

Generally I think it will work like this: you are either in melee distance or at range; generally unless you were surprised you will start combat at range from the enemies.
If you are at range, you can make ranged attacks or use your move to enter melee distance. When you enter melee distance against an enemy that is at range they become at melee distance as well.
If you are in melee distance, you can make melee attacks or move to become at range. If you move to become at range and don't take the Disengage action first you provoke an attack of opportunity.
I haven't used this system before so I'm sure there are some kinks to work out, but I think it will work.

What they did was roll initiative and we just kept that order through every fight. It was rough though when someone didn't post timely. So maybe the DM's suggestion is best, where there is no predefined order and she tidies things up in the summary.

Crumbling, flagging, and broken cobblestones are partially collapsed here, making an opening from the Underdark tunnel you have been traveling. Within the worked antechamber, hunting gear is racked on the wall. Three bedrolls are unfurled on the cold stone ground, in which three goblins snore; the stench of alcohol is on them.
The kenku stays near the front of the group when they travel. They seem glad to have Moss on board. Ukoo considers Moss to be an excellent partner with regards to exploring the Underdark. The kenku is also an expert of sorts, so their doubled expertise was quite welcome.
Ukoo looks from the intoxicated goblins back to their allies and whispers in a variety of voices, some familiar and others unknown, "Gobs, let's get them, sneaky sneaky, huh?"

Donk, noticing the others' actions, braces himself for combat by unsheathing his greatsword as quietly as possible. His kobold heart begins to pump faster, blood coursing through his veins as he anticipates a fight.
(OOC: Not sure if this needs to be asked OOC, but what kind of lighting are we working with inside the antechamber? Could one of us make a Perception check to notice anything remarkable amongst the goblins/hunting gear?)
(In general unless otherwise noted the only light is with the party, for Ukoo to see with.)
The hunting gear is crude spears, shields, armor, traps and the like. The goblins don't look like they'd be particularly menacing even if they woke up, on account of their inebriation; presumably empty jugs litter the floor.
