One of my players has the undead creature type but is a cleric with Turn Undead. He is past level 5 so Turn Undead instantly kills anyone who fails the save. Is he even able to use Turn Undead, or will he die if he fails the save?
Okay two things, well three - 1 always read spells/features/abiliteis as they will tell you the answer the qucickest.
2 - yes the cleric would be affected by their own feature since it reads:
Channel Divinity: Turn Undead
As an action, you present your holy symbol and speak a prayer censuring the undead. Each undead that can see or hear you within 30 feet of you must make a Wisdom saving throw.
3rd - Destroy undead specifically calls out what CR of undead will be destroyed by the feature:

1/2 or lower

1 or lower

2 or lower

3 or lower

4 or lower
5th level characters are not CR 1/2 so they will not be destroyed.
I like DxJxC's take. The dynamics of your deity (or your divine whatever) allowing you as an undead creature to turn undead creatures is something that should be worked out story-wise. I think in the process of doing that, you will solve most of your mechanical issues as well.

Players don’t have CR, so there is zero risk they will ever destroy themselves.
But turning them self is a possibility, given the broad wording and lack of choice to limit to “creatures of your choice.” Satyr and Centaur Ancients Paladins also run the same risk with their turn against fey. Since there are no legal squares to move to to get 30 feet away from yourself, you would just Dodge every round until the effect ended.

The idea of an Undead Turning itself is somewhat nonsensical because the consequence of being Turned is:
A Cleric can't run away from itself. It can't even attempt to.
For the sake of gameplay, I'd say the Cleric Turns themself and immediately takes "0 confusion damage", which ends the effect.
People run away from themselves all the time...
it is a bit difficult to not willingly move to a space within 30ft of yourself though :)
RAW, it is possible to turn yourself (if you roll a 7 or lower), and if you do you can't move or react and have to take the dodge action every turn.
Personally (and possibly RAI), I'd make you immune to your own turning.

If you can’t see yourself or hear yourself you are fine.
You arguably could shut your eyes to choose off “see yourself,” but hear yourself is pretty unavoidable.... unless you’re Deafened

Since it requires a holy symbol to be presented, maybe the undead cleric just drops the holy symbol and tries to run away from it :-)
