Thanks to extensive practice with the crossbow, you gain the following benefits:

When you use the Attack action and attack with a one-handed weapon, you can use a bonus action to attack with a hand crossbow you are holding.
I would say no because if you attack with Eldritch Blast, you are not using the attack action with a one-handed weapon.
Even if you used a one-handed weapon for the Attack Action (ranged or melee, it does not specify), you still couldn’t use the Light Crossbow because the feat specifies “Hand Crossbow” for the Bonus Action.

Oh definitely, but I was just thinking about how it applies to a Class that often relies so heavily on a very specific ranged spell. It does make me think a bit about how I often take Shocking Grasp when playing a caster class, if only so that I"m not completely boned if I get caught in melee range of another character... having crossbow expert instead would open up a few more options in those moments.
I hear that. Granted, Shocking Grasp is still one of the best go-to spells for that situation. I almost always grab it as a learned spell on my casters, but I'm also the kind of person whom enjoys planning for contingencies. 😂

For druids, Thorn Whip is great for this situation. It's got a range of 30 feet, but it's still a melee attack, so it can be cast without disadvantage. Pick up Spell Sniper and you can stay really far back.

Is it possible to use Eldritch Blast in the main action and with the feat crossbow expert use a light crossbow in the bonus action?
Let's have a look at the text:
I would say no because if you attack with Eldritch Blast, you are not using the attack action with a one-handed weapon.

Eldritch Blast is a [Tooltip Not Found] action - not the Attack action. Eldritch Blast is also not a one-handed melee weapon. So no can do.

Lightweapon (melee or ranged doesn't matter for this feat).The only thing that this feat does for Eldritch Blast is remove the disadvantage for attempting to cast it while within 5 feet of a hostile creature.

The Light Crossbow is Two-Handed. The only One-Handed Crossbow is the Hand Crossbow and it's magical variants.
