If you decide that they have become drunk, a usual rule is to give them the poisoned condition. So they would have disadvantage on attack rolls and ability checks.
Technically, alcohol is a type of poison. It’s even lethal in large enough doses.
If you want something different you could mirror the effects of the Exhaustion mechanic. Fail a Con save with an increasing DC 12->14->16->18->20->22. Every drink after the first raises the DC by a bracket, every fail = the same effects a level of exhaustion. If you hit 6 ☠️. Of course I would say 1 LR can negate 2-3 levels of “Drunkenness,” after a hard enough bender it could take two days to “sleep it off.”

You're not wrong, but I think what people are trying to get at is the degree of intoxication and impairment can vary depending on how much is consumed, instead of an all-or-nothing approach.

However, the exhaustion comes back a lot more quickly than normal exhaustion; but not ALL overnight (hangover!)

In my game the DM basically just occasionally has players roll a CON check, and if it's below a certain point you just end up drunk, but it doesn't really matter how much you drink, just whether or not that particular roll triggers a drunk stat.
1st drink, DC 10 CON save. Each successive drink increases the DC by 2. For every failed save they suffer the equivalent of 1 level of exhaustion. When they hit 6 levels of exhaustion they fall unconscious and have to start making death saves. One Long Rest allows the character to make a Con save (DC=highest DC for the drinking) on a failed check the remove two levels of special exhaustion, on a successful save they remove 3 levels. On another LR all levels are removed.
As others have mentioned the poisoned condition and levels of exhaustion are how most DMs manage it, but I've debated what if the PC is immune to poison?

You could get drunk by a whale, or would that just be swallowed? There may need to be a big blender first.
Depending on the level of drunk I go with disadvantage, triple disadvantage, or quad disadvantage.
There is no such thing as double, triple, or quad disadvantage.
Poisoned/Drunk makes you have disadvantage on attack rolls and ability checks.

If you want something "custom", borrow from the exhaustion table. If they reach max "exhaustion" they pass out, rather than die, heh.
Level 4 - half hit points because the other half have ended up all over the floor as they empty their stomach... continuously.
Level 5 - Speed 0 because they're either on the floor or on the table, but not yet passed out. Tankard still in hand, trying to sip sideways.
