My DM expects us to have at least a couple weeks of downtime between adventures to train/learn/get jobs. Between the lack of loot and having the pay rent all the time, my character can never get more than like a 100 gp at a time when I need several hundred for the things I want to do.
I make so much money as a druid by making potions. I taught my in game spouse how to brew potions, and since we share income, we make hella cash. I kinda feel bad for the rest of my party, though.

I went with being a master thief. Whenever we get into a setting where there are goods or currency around, my hands get real sticky. Especially for items. It's a character flaw, if I see something valuable I just can't get it out of my mind until I steal it. I stole a 7,500GP item for our tortle a week or two ago and just gave it to him, but for me my urge was fulfilled.
Step Two: beat the crud out of them until either they are dead or give the item to you.
Step Three: sell magic item for much more than it’s actually worth.
Step Four: repeat.

True, but if you get enough water, even if it’s filled with mud, all those dehydrated travelers will come to you and buy your water.

Artificer cook 😄. Staff of flowering to make any plant, so lots of veggies, and use the spice pouch to BAM!!!! Of course get a ranger added and get meat to the meal. Make cheap food at a festival or host a major affair for royalty.

There's a difference between flowers and vegetables.
Personally for this I'd go Mark of Hospitality Halfling as a rogue/cleric/druid mix. Expertise with cooking supplies, druidcraft and create food or water plus eventually heroes feast.
You can conjure decent meals multiple times per day, you can use druidcraft and plant growth to easily farm vegetables and fruit, you are an expert at cooking normally, you can conjure basic meals when in a pinch. you can create goodberries to ensure people are nourished or for flavouring things, etc.
I also recommend an Alchemy Jug to create mayo or beer.

It drives me crazy when DMs think that the whole game should be combat all the time without a chance to spend your wealth and build something for the trouble. Honestly, if your characters have gone months in almost constant combat encounters, and you aren't playing them as paranoid and shellshocked, or complete psychopaths, then they aren't being portrayed realistically.
I actually love roleplaying games with a lot of downtime, where the goal is to take a job here and there too make ends meet, where you have to track how much food you have, and arrows, and if playing 3.5 you regain your level in hitpoints per day of non combat activity, so you actually want to avoid trouble and stay safe, and if you have to fight you think and plan and hope to not get hurt. It's gritty realism, but still fantasy because my character is far more capable than me and the labor he performs doesn't hurt me.
