how about handaxes, more powerful than daggers and WAY cheaper and just as potent damage wise as an trident, or use the trident's superior cheaper simpler cousin the spear or use javelins or use anything other than a trident always

If you get a cool magic trident that might be good, or if your character happens to be a fisherman and they just favour the trident out of habit (tridents are designed to basicallhy latch onto a fish and stop it from moving, irl having your weapon stuck in an enemy in combat is not verry useful) but otherwise there is no real reason to pick trident. I think tridents need an mechanic exclusive to them that makes them worth it in some way, or an special "war trident" can be added that is more distinctly tridently, and all creatures with innate trident proficiency are also profcicient with that

i am soup, with too many ideas (all of them very spicy) who has made sufficient homebrew material and character to last an thousand human lifetimes

Actually sounds pretty cool. For better or worse, there aren't any differences in weapons for the most part.
I think that the grapple without the reach is good enough. Reach is a powerful feature and not that many weapons have it and without major drawbacks. The whip has the lowest damage die and the lance has disadvantage on foot.
Basically, at level 5, you can have 4 attacks, one requires a bonus action, which fighters don't get until level 11. Sure, all your damage dice are 1d6, and you can't add rage damage to the thrown weapons, but it is still pretty good.

Simply because otherwise I’m not sure how, even with the poisoners kit, you’d need to go buy one, find supplies and gain DM fiat in order to brew poisons that impose the condition rather than just do poison damage.

Left a lengthy list of suggestions on how to improve Noble Genie... hopefully they don't just scrap it and just change it's abilities to be a little more... useful. Honestly, this thread has come up with a ton of good stuff (if only they read this forum).
Jeremy Crawford is on public record as stating that Wizards doesn't bother reading any of the written feedback. The only thing they look at is aggregate "like" score; the written comment sections are placebos provided specifically to get people who otherwise wouldn't leave the "Like/Dislike" feedback that is the only thing they want to go and give that feedback. Which is both awful and completely fair. This dumbass company already does far, far too much design-by-committee as it is, and legal entanglements from knowingly using unsolicited ideas is always dicey.
People who have any freaking idea how to design games properly at all are just going to homebrew their game anyways. Or stop playing 5e when Wizards finally harps about Adventurer's League one time too many and move on to a better system.
Yeah I kinda thought it would be like that... guess I'll just have to homebrew my own Noble Genie. Just sad, because they are so close to greatness with it, they just need to change up the spell list and AT LEAST Protective Wish and Vessel.

For the Mercy Monk, up until level 5, how would you go about imposing the poisoned or incapacitated condition for Hands of Harm?

A spellcaster could incapacitate them with Hold Person, or a similar spell.

Hold person is a paralyze iirc.
Paralyzation incapacitates you.

It also allows those attacks to be critical hits, so that's a way to get your best out of your ki points.
