For me, I guess they are not necessarily 'weird' but a little on the strange side, I have the following characters made:
Tabaxi that was turned to a Damphir as a child and grew up and studied as a Echo Knight Fighter in an underground temple devoted to Bhaal.
Little Goblin that is a Conquest Paladin, so this tiny little guy is destroying these huge creatures.
As I said, nothing really weird, just some fun combinations.

Sing of Bahamut, the Platinum, molding the shape of the mountains and rivers; Sing too of Chromatic Tiamat, painting all over the infinite canvas. Partnered, they woke in the darkness; partnered, they labored in acts of creation.
Possibly my strangest is Puke, the goblin bard I've just finished playing after a two year campaign. He canonically can't sing, can't play an instrument and can barely read or write despite speaking 6 languages, but after growing up as a jester in the Unseelie Court of Fey is very gifted at torturing people in flamboyant and amusing ways. He's always smiling and cheerful but has absolutely no compunctions about murder because he was never brought up to consider it anything other than a source of amusement for others

I've similarly just finished building Ah'Darrel (pronounced "Uh... Darryl?"). He's a Gnome Conquest Paladin who really wants to take over the world "but, y'know, there's a lot of competition out there, and you need power and henchmen and name recognition and, like, I gotta really build my brand before I can go do any of my really big evil plans. Oh, by the way, are any of you interested in becoming powerless underlings in the grand machinations of my upcoming evil empire? You will need to sign liability waivers."
I’m personally a fan of unconventional characters (orc wizard, etc.), so to me they’re not really all that “weird.” My preferred way to create a character is to roll stats in order first and then choose a class and then the race. I’ve found that I often end up choosing a race that best fills in areas that could stand improvement rather than a race the improves whatever’s already good about that particular PC. For example, I once rolled up a character with a particularly high Int and a moderately high Dex so I went wizard with him, but he was a little light in Con and Wis (Str & Cha not being priorities). So I chose Lizardfolk (Legacy) since the +2 Con was very welcome, the +1 Wis helped sure up the character’s “good” saving throw, Natural Armor meant not needing to rely on mage armor, and Hunter’s Lore gave me access to Stealth and Perception proficiencies. All in all it was rather fun to play, and not something I would have ever put together under normal circumstances except the +2 Con & +1 Wis brought both of those scores up to solid even 14s which benefited that PC since it already had high enough scores in Int & Dex (17 & 16 respectively) from the dice. (I don’t like starting with an 18 main stat most of the time since it leaves very little to look forward to. It makes the game kinda boring to me.)

Silver Dragonborn Druid of wildfire. You can probably see how that went wrong. He also has 66 rats, counting the wildfire spirit. And a hat of vermin. That summons rats.

I have absolutely no idea why that class/race combination would go wrong. It's not like dragonborn have any sort of elemental restrictions.

He's been so much fun to play I’m really going to miss him now the campaign has come to an end. Might have to bring him back as an NPC in a game I DM
