The one that could never be caught? I feel like a statblock isn't necessary for it.
Good point.
any ideas?
Maybe a Cerastes? They were serpents who did not have a spine, so they were incredibly flexible. They had ram horns on their head and they would bury themselves beneath the sand to hunt prey. Their horns would be exposed which would cause prey to come closer to investigate and then the Cerastes would entangle them and kill them.

The Cerastes has no spine, so it is extremely flexible. It can move through spaces as narrow as 6 inches without squeezing. In addition, it can escape grapples using 5 feet of movement, and it can dodge and disengage as a bonus action.
False appearance..
While the Cerastes is completely buried besides its horns, creatures must make a DC 16 perception check to determine that it is a creature.
Actions
Bite.
Melee Weapon Attack: +6 to hit, reach 10 ft., one creature. Hit: 11 (2d6 + 4) piercing damage.
Constrict.
Melee Weapon Attack: +6 to hit, reach 5 ft., one creature. Hit: 13 (2d8 + 4) bludgeoning damage, and the target is grappled (escape DC 16). Until this grapple ends, the creature is restrained, and the snake can't constrict another target.
Strange fascination.
The Cerastes targets 1 creature within 10 feet of it while it is hidden by false appearance. That creature must make a DC 16 wisdom saving throw. On a failure, the creature must use all of their movement to get as close to the Cerastes as they can. Until the end of the creature’s next turn, the Cerastes has advantage on attack rolls against it.
I don’t really like this one, because i didn’t really know how to add it mechanically.
