I assumed so. You said the Monk was underpowered, right? Why do you think that? It actually deals more damage than most monk subclasses.

it takes a ki point to turn into, and really only the grappling is very good. strength saves are rare, and 5 feet extra reach is not the good. and the grappling is good, but not as good as say, using a martial weapon instead of a simple, and getting plus 2 AC. (kensi)
Might of the Giant:
using your strength? whats the points? you would probably have higher dex, and if you did a strength build, you would only get to use it until level 6, and you would have less AC.
the other part, is very good though.
Towering Form:
basically useless except for heavy weapons, which dont have finesse, so there not even worth it.
Mastery of Colossal Strength:
this is the main reason i think the subclass is underpowered. its level 17 ability just gives extra reach and re rolling strength saves? sieioiusly?
Form of the Hulking Titan is very similar to Arms of the Astral Self from the Astral Self monk. It's not as good at martial weapons as a kensei, like every monk subclass except for a kensei. That was purposeful. From a balance standpoint, the ability is definitely not underpowered.
The point in using your strength over dexterity for this subclass is so you're better at grappling, better at strength checks/saves, and so on. You won't have great AC, but it will generally be on par with the Barbarian's AC if they're using Unarmored Defense.
Towering Form lets you use heavy weapons, and you can use Dexterity or Strength with attacks for those weapons, as they count as monk weapons. Combine this with the other subclass features, and you become really good while enlarged with a Greataxe or Maul.
The capstone ability gives you an extra 5 feet of reach, for a total of 15 foot reach with non-reach weapons, and the ability to reroll attack rolls and ability checks that need Strength. If you use Great Weapon Master on that Greataxe you have, and the -5 to hit makes you miss, you can spend two ki points to reroll the attack roll. Same thing applies to grapple/shove attacks. It is actually really good.

This is slightly off topic, but I do something slightly different. The soul is the culmination of all of who that person is, the sum of all of their metaphysical parts. The spirit is the vessel that contains the soul. When a creature dies, their soul is contained within their spirit, which is basically your ghost. Spirits are worthless, merely intended for transportation or physical interaction with the vessel that contains the soul, while the soul has actual value and power, as it is you. Selling your soul to a devil is literally giving yourself as a slave to the devils, and allowing them to change the person you are into a monstrous embodiment of law and evil. Warlocks get magic because their patron permanently alters their soul, allowing them to channel magical energy from it.
Creatures without a soul don't have sentience (high intelligence) and don't have passion (high charisma). Golems don't have souls (they're animated through elemental spirits, and don't contain a soul), Owlbears don't have souls, and Steel Defenders don't have souls, as they don't have sentience and don't have passions. Wisdom isn't tied to having a soul or not, that is how perceptive you are, which has to do with your body more than your soul. Everything that isn't a part of your soul is a part of your body. Your physical might (STR) is a part of your body, your agility (DEX) is part of your body, and your health (CON) is part of your body.
(Your mind, will, and heart are also different, but are contained within your soul. Your mind is your knowledge, memories, brain-power, and intelligence. Your will is your mental resilience, sanity, agency, devotion, and "will to live". Your heart is your empathy, decisiveness, and charisma.)
tl;dr: Souls are your personality, individuality, mentality, and behavior, while your spirit is the vessel that holds the soul when someone dies. All of your mental ability scores (INT, CHA, and some of WIS) are contained within your soul, causing the soul to be the root of magic for PC, while your physical ability scores (STR, DEX, CON, and some of WIS) are contained within your body.

That's an interesting analysis. One thing I would like to point out- if something can think, it is sentient. Almost every animal is sentient. The word you are probably looking for is sapience. Sapience is the ability to use the things you know by applying reason and logic.

I would say as soon as you can comprehend the concept of a soul, you have a soul. So, sometime as a toddler, probably. That's when I understood the basic concept, at least.
If someone is born brain dead, they cannot comprehend the existence of a soul, so they don't have one. Humans gave ourselves our souls by understanding the concept, so if you can't understand it, you don't have one.
Empathy is definitely a part of it, but I would say it's more a part of sapience than it is for "soulhoood".
Lots of animals have empathy. Chickens get sad when you take their eggs, Elephants mourn dead Elephants that they have never met, Dolphins and Whales have been seen dragging the bodies of their dead babies for months after they died because of grief, and Chimpanzees mourn the loss of their parents. I wouldn't say empathy gives you a soul, but it definitely is a part of having one. That's why people call evil people "soulless" or "heartless".
