The answer to everything is the same:
If the spell is already cast and you are just concentrating on it then no, the spell will not end if your book is destroyed. Once the ritual casting time is complete you ritual book is no longer required.
If you are not yet done casting the ritual, and your book is destroyed, your ritual is interrupted and not cast. If you have a backup copy of the book, you can switch to it no problemo if it is in reach and save your ritual. The book itself is not a focus for anything.
Note that the answers presented apply only for wizards, pact of the tome locks, and feat ritual casters. Bards, Druids, and Clerics (and Barbarians with rituals given by their paths) must know or prepare rituals and therefore don't need a book at all.
