I'm pretty sure a lot of norse lore carries over into D&D. Handbooks often give Thor as an example as a God for a cleric, there's a city called Baldur's Gate, etc. You could always just use Thor or Odin.
I think your best bet would be to start with the cleric domain your after and then find a deity to fit. And also check which world you're using or the Pantheon your DM plans to use.

Thor and Odin, etc. were canon in Mystara (OD&D & 2e), and there has got to be some canon crossover between the two somewhere. Even if it has to go through 6 degrees of Kevin Bacon separation.

It was hollow, but you could ignore that if you wanted and just play on the surface. Do you remember those old Gaz publications that came out back then? Those were all of one continent on the surface. Remember Blackmore? That was, like, 5,000 years in Mystaran history.

I’ve DMed Homebrew and Mystara, eventually I merged the two for my own use. I’ve played in both Planescape and Dark Sun, loved them both. Barsoom Athas was a blast. I could never get into FR, Grayhawk, Dragonlance, or Birthright.
I had the birthright box set, and never really got into it either. That was at the end of TSR though when they were just pumping stuff out.

I had a buddy it was his favorite setting. Different strokes for different folks. In some ways I kinda miss the TSR days. I mean, the rules are much cleaner now, this is the cleanest edition of D&D ever written. Of course they are still woefully inconsistent to say the least. 🙄
But back then there were so many sources to combine and things to try and ideas to explore. Now it feels like you make a choice at 3rd level and then you’re on autopilot except for the ASI levels and even then there really aren’t all that many choices. Unless you multiclass and not everyone wants to have to do that. I dunno, I guess I feel a lack of agency in character development. 🤷♂️
yeah I can understand that. We've seen the alternative of too much choice in 3.5 though. I get why wotc's done what they've done. I'd like a bit more, but I'm not starved for it. I'd rather have quality than quantity. Frankly, I waffle as to their ability to provide either sometimes. A lot of the UA stuff they put out is either interesting or not...but a lot of it is stuff that people haven't been asking for. Why not focus on things that are popular asks?
For example there's been a lot of desire for a /good/ arcane gish for a long time. EK and Bladesinger are a bit extreme, and not really what I think people are looking for. I think if they took the ranger and welded on the sorcerer spell list (kind of like how 1e rangers had arcane spells) as part of a new archetype, a lot of folks would be pretty happy with the result. It's not as good as a new class, but I think it really scratches a lot of itches without coming out of left field.

D&D actually only gives you the rules for the game, which kind of deities you're using comes from the setting.
In the Player's Handbook there even is a section about 'Fantasy-Historical Pantheons', the Norse Pantheon being one of them.
