Thematically, the classes feel like they have a lot of overlap, with Paladin's being more divine agents of ass kicking Blood Hunters being eldritch agents of ass kicking.
Mechanically, by multi-classing, you will delay your Paladin smite damage (less spell slots) AND your Blood Hunter crimson rite damage.
Paladin needs a high Strength, Constitution, and Charisma. Blood Hunter uses Wisdom as its mental stat. So you need to have 4 high stats.
You are looking at the following stats (I am picking Triton for the race since it gives +1 STR, CON, CHA)
STR 16 (15 + 1) DEX 9 CON 14 (13 + 1) INT 8 WIS 14 CHA 14 (13 + 1)
which isn't terrible, but I would rather have WIS or CHA at 16 for harder saves versus my abilities.
Because it is MAD (multiple ability dependant). You need at least a 13 in STR and CHA, but you will also want your WIS and CON to be as high as possible too.
Also not much actual overlap between the two classes. Blood Hunter wants plenty of BH levels for Crimson Rite, Palladalladingdong has amazing high-level abilities it generally only wants to give up if it's getting plenty of Smite fuel from its multiclass buddy. You'd double up on Extra Attack at fifth level if you tried to balance your progression, and neither class seems to help the other much with a 4 or less dip.
Blood Hunter multiclasses better with Fighter (of course) or potentially Cleric depending on domain, while Palladalladingdong wants either a Fighter dip itself (because fighters), or a specific Warlock or Sorcerer build. Elsewise it's content to never stray outside its base class.
From a mechanical and purely META standpoint the Paladin gains very little from the BH MCing.
Now it depends if its for RP purposes only, and you want to make an Edgy Knight of Blood and Doom.
I played around with the idea of getting BH lvls at higher lvls, with a character that is allready Paladin/Warlock multiclassed.
I was going for Order of the Lycan, for the Hybrid form, so that i can play it as a Devil Trigger in DMC games, since my character is a Tiefling, but thats just for lolz and giggles more than anything else.
Cause quite honestly the Crimson rites at lower lvls are negligable( i mean d4's?, come on why is anyone even considering this dice to be used for anything?), and you don't gain any spellslots.
The Main mechanic of the BH is the use of crimson rites and Blood Curses, but only with a few lvls dip you have the lowest of Crimson rite dice, and only one Curse to use.

If you really want to try it I would say use the new dragonborn to you can get some bonus but it is pretty MAD For the order i would go for if you want some more spells profane souls with a vengace pladin to tie it in
I actually made a Warforged Vengeance Paladin 3 / Ghost Slayer Blood Hunter 17 who kicked ass. He was a ghost possessing a suit of armor hell bent on avenging his own death at the hands of a lich. He only used his spells on minor healing when someone went down and SoF/PFGAE to face any undead he came across. He ended up with an Armor of Invulnerability and Holy Avenger Greatsword. Coupled with the Vow of Enmity and 2 attacks, he could deal some serious damage and act as a decent tank.
Don't know if you've attempted this in the time since you last posted this -- but, if not, it is possible. It is difficult to do if your table is one that uses point buy or standard array. But if you are a roll-for-stats table, and you get decent starting stats across the board it opens up the MAD combinations that most people ignore. You'll have the usual people that say Paladin needs: Str, Con, Cha and the Blood Hunter needs Int or Wisdom so it is a 4-stat focus.
However, you could get by with a lower Constitution score as a 1d10 class and if you take the Tough feat (if your table uses feats) it essentially is like having +4 Constiution (+2 HP per level); so with Tough, a 12 Constitution feels like 16, etc. You'll have slightly less HP than normal, but it's not just "end of the world" as many players make these things out to be.
So, with Constitution not being as big of a worry, you could just focus Str, Cha, Int/Wis. Non-Variant Human with good rolled stats gives +1 to every stat, which can be very useful sometimes.
All in all, it's fun for an RP-reasons-based character -- a warrior of their own convictions that decided to fight fire with fire and undergo the Hunter's Bane. Would work nicely with like an Oath of Vengeance (revenge on fey/fiend/undead that ravaged your homelands, perhaps).
If you're looking for a powerful character, this isn't a good combo to make. If you're looking for aesthetic/rp then this can be very fun to play. You would want to get a gauntlets of ogre power (or belt of giant strength), an amulet of health, and a headband of intellect. So you'll have to focus on using your stats boosts on CON and CHA.

Depends on what youre up against. If you have the divine rite through Ghostslayer fighting undead its 2d4 for 1d4
