Berserk. Whenever the golem starts its turn with 40 hit points or fewer, roll a d6. On a 6, the golem goes berserk. On each of its turns while berserk, the golem attacks the nearest creature it can see. If no creature is near enough to move to and attack, the golem attacks an object, with preference for an object smaller than itself. Once the golem goes berserk, it continues to do so until it is destroyed or regains all its hit points.
The golem's creator, if within 60 feet of the berserk golem, can try to calm it by speaking firmly and persuasively. The golem must be able to hear its creator, who must take an action to make a DC 15 Charisma (Persuasion) check. If the check succeeds, the golem ceases being berserk. If it takes damage while still at 40 hit points or fewer, the golem might go berserk again.
Aversion of Fire. If the golem takes fire damage, it has disadvantage on attack rolls and ability checks until the end of its next turn.
Immutable Form. The golem is immune to any spell or effect that would alter its form.
Lightning Absorption. Whenever the golem is subjected to lightning damage, it takes no damage and instead regains a number of hit points equal to the lightning damage dealt.
Magic Resistance. The golem has advantage on saving throws against spells and other magical effects.
Magic Weapons. The golem's weapon attacks are magical.
Multiattack. The golem makes two slam attacks.
Slam. Melee Weapon Attack: +7 to hit, reach 5 ft., one target. Hit: 13 (2d8 + 4) bludgeoning damage.

Considering how weak this is, i think i can beat it with my level 5 rogue. No seriously. In the west marches server we have we have a mechanic where you can spend slots equal to your proficiency bonus. It includes stealth, worth 4 slots, to be able to attack with adv and get a surprise round. I play an arcane trickster, not an assassin, btu i also get to use 2 slots to set up a trap worth 2d10 damage. (The favorability slots is what it's called. If anybody is interested in how it works, tell me and i can tell you the details). Anyways I use booming blade alot, as well, so i think i can, considering i have elven accuracy and a +7 to hit with my +1 rapier and my +1 longbow, i think im set. Im gonna test it on avrae and reply backhere on results

No, in the original book, Frankenstein's creature was extremely intelligent and articulate. He actually taught himself how to speak and how to read, just by listening to a family and perusing books. He even killed a person later, and framed one of Frankenstein's close people to provoke him, and throughout the book he was one step ahead of his creator.
This make this frankensteins monster, simply change it's intelligence to 16 or something. Was very well read. Also maybe do something to its charisma. Was a charming fellow, just repulsively handsome. Comes with being made of the stitched together parts of other handsome people.
How are Golem weapon attacks considered magical? just +1 if it happens to pick up a club, for example?

yeeea this is BUSTED as hell to start the campaign of with. To someone who wasnt cheating and looking at the stat block, there's no reason id figure this wasnt feasible for 7 lvl 3's to fight. My party and I barely survived because half of the party was relying on Martial damages to hit which this this is IMMUNE??? to.
I understand that the whole characters dieing and respawning is a whole mechanic but the problem is that the golem doesnt even do that much damage to really ward off a larger party of players. I feel like the Planescape campaign needed to have a much higher tier, more obvious "dont fight this" kind of monster like a Dragon or Demon or some such. In the context of this campaign, the Flesh Golem appears to be more of a larger sized zombie. Either the players should get adamantine weapons or this thing needed a variant bc the long combat sure wasnt fun.

I know its been a few years since you posted this but to clear things up Frankenstein's Monster (Adam?) was a bit of a genius. The story "Frankenstein" is told by him from his perspective.

Been a long while since I read "Frankenstein" but I don't think lightning, or any other electricity, had much to do with the creation. Wasn't it more about alchemy/ chemistry? I seem to remember the "monster" came to life while Vic was at class.

I usually make Flesh Golems Goliath size or smaller but the real question is how much of how many humanoids did you use, I like to consider it to be about 20% from like 6 or more humans, also for detail this could contain elf, halfling, human, goblin, hobgoblin, bugbear, orc, Gnoll, or similar humanoid fleshes. Like give it a swimming speed and make it be a merfolk or merrow Flesh Golem. Or you could add racial traits from multiple races such as Stone Endurance from Goliath, Saving Face from Hobgoblin, Flight from Aaracoca (if that's how you spell it), and lastly aggressive/bite from gnoll. Making the most terrifying Flesh Golem ever. This would likely increase its CR by 1 so it would now be a CR 6 maybe.
If your DM agrees there could be some simpler ways to make this. Don't get me wrong this still would be a extremely expensive and complicated thing to do
