A hill giant by itself probably won't be much of a challenge - it doesn't have enough actions to really threaten a whole party of adventurers. Two hill giants might do the trick, or you could give it some minions to add to the encounter (dire wolf, ogres, orcs).
Another option would be to look at some monsters that have legendary actions at around the same CR, and just re-skin them to be appropriate for the hill giant.

Although they each have like five first level spell slots, so I'm going to be doing a lot of calculating.
Against a party with well built characters, I would use two Hill Giants, and give them a bunch of Orc minions, or send them at the party after they've been wounded. A party of fully healthy 6th level players with spell slots and abilities will dispose of one Hill Giant with ease. The level 6 Goblin Battlemaster Fighter with the Sharpshooter feat and Crossbow Expert feat in our party did 91 damage to a Hill Giant in the first round of combat (he hit with all 5 of his attacks). On the other hand, in a different combat, a Hill Giant critted our Goblin Battlemaster with a boulder for 44 damage. My level 6 Half Elf Fighter 1 Celestial Warlock 5 is a pretty even match for a Hill Giant 1v1 in melee combat.
If the party doesn't have a bunch of well built characters, he does hit pretty hard. You need to know how good your party is at doing damage, because some level 6 parties can chew through 105 HP with 13 AC really quickly, and other parties that aren't built for damage will take a while to do 105 damage, even against a target with just 13 AC (and bad Dex, Int, Cha, and Wis saves). And not all parties have a resilient tank built to stand up to a Hill Giant and take a few hits without dying. If a Hill Giant starts attacking some of the squishier people, two boulders can often bring down a level 6 player. So most of all, it depends on how quickly the party can bring down a Hill Giant, and this varies widely between parties.

So i'm DMing my first game, its just me and my lady so we really aren't going deep into the rules so much as learning as we go. right now the party is built as
Wood elf lvl 3 life cleric with 2 levels into druid. ( we are real life outdoors people so we wanted to include that in the game)
half elf level 5 Rogue my character which i use as the role play equivalent to stop the party from TPK and starting over or starting new characters.
aquatic elf level 3 fighter side kick that just sort of came out of roleplaying and we thought it was cool. (this guy was the crab outside of the tower of storms quest.) the story is that miraal was the master of the crab but because they were both cursed. I'm writing a side quest for the npc to regain his memories and choose to leave the group and return to his people or stay with us and forsake his past.
point is i want to give her cleric the belt of giant strength cause she has a score of 8 and she wants to use maces. how would you weave an encounter with this dude to make the acquisition of the belt more fuild and roleplay realistic. we are currently playing the Dragon of Icespire peak.
Also, how would the range attack work, realistically not that many boulders in a plains type setting would the attack be just one boulder or does the boulder magically show up to be thrown?

for 5 level 2 players? id say thats probably a pretty deadly encounter. They might be able to pull it off but the hill giant can one shot most, if not all, level 2 characters.
My 5th level zealot barbarian just 1v1ed this bad boy and won.
Would one Hill Giant be good for a party of 5-6 3rd and 4th level characters or should I pump the difficulty a bit?
Put them against a monster with spell slots equal to or better than theirs, or just overpower them with a high challenge level (for level 3’s) like a Green hag or something like that.
It depends on the amount of people in the party, but 1 seems about right for 2 players. For 3 players just use a stone giant gone rogue.
