Apologies if this is elsewhere, but i think i found an odd bug, or at least something not so user-friendly if it is intended. (we had some very excited people in our upcoming campaign... woopsy)
For manual the box you edit should be the total combined "rolled" amount. The system will automatically add for your Con mod.
The system isn't designed to force a maximum based on class. This is intentional because you may have custom homebrew effects in place, or want to manually factor things like spell effects that increase or lower max HP temporarily. You could have a homebrew rule where you also have extra HP. For example perhaps you have a magic item where when you increase in level you get a 1d4 bonus to Max HP? This cannot be made using the homebrew system, but you can just add the roll into the manual box total. All sorts of ways that would be insanely difficult and timeconsuming to code up so it was left as a manual box to enter what you need and be adjustable for when you need to do that.
If you need to record health rolls (bearing in mind most don't) you do have a Notes field on your sheet.
Still better than pen and paper.

As I understand it, there is a bug that occurs if “manual HP” is selected before class has been selected the character sheet automatically defaults to a d12, and then is not corrected once the class has been selected. If one chooses class and then selects manual HP, it pulls the information for the correct die type.
There is definitely a bug with Manual characters. Probably because you don't have an option to start as a Manual character and get the Fixed option for HP, which should only be the Max HP of the HD. After I noticed this on a handful of different characters that I have created recently, I thought I would go looking. It seems that when you create a Manual character, that it is adding the CON modifier to the Rolled HP, and then adding the Con modifier again. This only happens if you choose Manual instead of Fixed before you do anything else. If you add Race / Class and Stats, this doesn't happen. Only if you change from Fixed to Manual and then add Race / Class and Stats you get the bonus HP.
Edit: Now that I have tested more and look back through some of these, I think IamSposta is correct that is choosing the wrong Hit Die and is always a 12... which kind of makes sense because there is no way to know at that point what that field should be.

if i create a new character with this HP Point Type option:

and then add a class (in this case a 'sorcerer') it can add an HP value way above what is allowed:

I feel like this should either be locked to whatever hitdice is allowed to the class - or the user should be prompted to add his/her dice roll.

Yup, I just had a look at that character and it's doing exactly what it's been told to do - a value of 12 has been entered manually for "Rolled HP"
The value entered there should be the amount that was rolled on the hit die (1d6 in this case).
The value is allowed to exceed the normal maximum, as this supports homebrew games where DMs allow a larger amount of hit points at 1st level.
