For me, monsters are always fun, but their de-humanized conflicts with no messy moral questions. I prefer going against enemies who are playable races, especially if their human. Because A. There are moral questions tied to it because killing another sentient because killing a sentient(especially a human), no matter how vile they are, is not something we should feel too good about. And B. To remind players that evil can be found in any species, and that humans can be capable of evil that rivals that of monsters.
My favorites are NPCs who think they're doing the right thing when doing something that appears dastardly and monsters who are just doing what is in their nature rather than any actual ill intent. My favorite scenarios toe that thin line between revenge and retribution versus necessity and justice, and you need such NPCs and monsters for those scenarios.
Human. Male. Possibly. Don't be a divider. My characters' backgrounds are written like instruction manuals rather than stories. My opinion and preferences don't mean you're wrong. I am 99.7603% convinced that the digital dice are messing with me. I roll high when nobody's looking and low when anyone else can see.🎲 “It's a bit early to be thinking about an epitaph. No?” will be my epitaph.
Anything with interesting and unique mechanics. Vanilla enemies with slightly reskinned attacks don't really do much for me, but I go absolutely gaga over anything with a difficult or novel feature. Unfortunately this means that WOTC can't deliver for me and I end up spending money on 3rd party stuff and spending time homebrewing but thats the price of quality ig.

Doesn't really matter what kind they are as long as they are used logically and in interesting ways. A bunch of orc raiders showing up in the middle of a city where they couldn't possible or logically be is just weird, same would go for a water elemental in a desert. But let's say that the city garbage disposal has a rust monster to get rid of scrap metal and it gets loose in the city? That could be fun. Or maybe the local crime boss has a black pudding or gelatinous cube to dispose of bodies? Could be useful even to get rid of living bodies...
Humanoids are definitely my favorite- they allow you to lean more into greyish morality.

It’s actually funny you say that. One of my most memorable encounters was when a party-mate discovered a rowboat, conveniently abandoned on the shore of an underground lake we needed to traverse. With a handful of gems scattered across the deck too! What luck!
Bugs. Giant Bugs. The kind of bugs you supposedly find in Australia. Like spiders the side of dinner plates. I don't like bugs, not even little tiny ones, alone or in swarms. Creepy-crawly-little-ones or great-big-huge giant bugs. I don't want to fight them in the real world, so I'll take great joy in smashing them in a game.

I love using Humanoids, because it means that they are guaranteed to speak a language, usually common, meaning it is always possible to at least attempt a social encounter to get around a combat.
Additionally, you can change so much about how a humanoid monster plays just by changing its weapon, armor, and what abilities it has. Humans can have basically any ability as long as you can justify it, so they are versatile. If you want an ambusher, you can just use a Spy or Assassin. A brute could be a Berserker or Champion. They are pretty easy to homebrew too, you don’t need to come up with a whole new biology and appearance, you can instead focus on their skill set.
My favorite is anything that can get the party really into the roleplay aspect. Whether it's strong, scary, or conniving, if the party reacts strongly to it in character, that's what I love

Anything along the mythological/folklore/fairy tales vibe spectrum. Giants, hags, fae, etc. Make it otherworldy without making it alien.
