I love the skills with different abilities variant rule. It really allows for a good deal of creativity and versatility. Also, it's one of the few rules that really demonstrates the 5e ethos that there are no skill checks only ability checks to which you may be able to add your proficiency bonus.
I'm quite partial to the Charisma (Stealth) check for blending into a crowd, but I'm wondering what your favorite uses of this rule are?
I've called for Intelligence (Persuasion) checks, Intelligence (Sleight of Hand) checks, Strength (Intimidation) checks, Constitution (Acrobatics and Athletics) checks, and Wisdom (Religion) checks on different occasions. I have called for others, but they don't come to mind at the moment.

I agree, and it can apply to tools too! Here are some of the ones I have used and the situations:
Long distance running - CON (Athletics).
Trying to juggle with a mage hand - DEX (Arcana)
Disarming an explosive puzzlebox - INT (Thieves' Tools).
Crafting a believable forged letter in the style of an important diplomat - INT (Deception).
Proselytizing to some villagers - CHA (Religion).
Operating on someone, to remove a barbed, poison arrow from them, while they are on the back of a cart in a high speed chase - DEX (Medicine). Yup, that happened.
I am sure there are many more folks can think of and maybe even disagree with some of the ones I used and .... that's ok that we approach things differently.
So, what interesting ability skill checks have you folks used?
Having played a lot of D&D and a lot of Vampire, I like how the Storyteller in Vampire can call for say, an Intelligence and Firearms roll for instance, so I'll use Cha and Religion, Str and Persuasion, Con and Medicine, anything that seems like an appropriate combination for the situation.

I let my players use Strength (Intimidation) quite a bit. Just because the 7’ tall barbarian has a low Cha score, they can still be scary.
