you read the title. as far as I know there are really only 4 BIG sea monsters in DND
kraken. its honestly a little lackluster for me
sea serpent. no comment
dragon turtle. now were getting good. steam breath? genius
leviathin. my favorite. the only hang up is the whole "made of water" thing, but I've never run one and maybe that makes them really cool
the crab thing from the giant book doesn't count. its only huge
are there any other sea monsters I should know about? please?

The bronze dragon's feeding grounds is aquatic. That's enough of a hook to setup an encounter. From a quick search it looks like there might be some from individual adventures, but I don't have access to that content to verify.
Storm Giants also can breath underwater and have one of their environments listed as underwater. You could always homebrew something as well, it doesn't have to actually be in the game.
Looking for Gargantuan Creatures with Swim Speed mostly finds things we already knew about, though it's interesting that Zaratan has a swim speed, maybe they were originally thinking of using it for living islands.

I know it’s still basically a Kraken but Tromokratis has some fun and unique abilities.
Now if we’re thinking about dragons then Topaz dragons could work.
another fun creature would be cosmic horrors, I believe they have a swim speed and you could add them if they don’t.
The aboleth.

Do you mean the storm crab? If so then it totally counts because it’s Gargantuan, not Huge.

There’s also the ironscale hydra in MOoT that might meet your criteria, as well as this bad mamajamma, the Maw of Sekolah from Ghosts of Saltmarsh.
