Any idea what I could be doing to make this thing think I'm manipulating rolls?
If you want to avoid the issue entirely, you can roll in the campaign on your character sheet and just mention the values here.
That’s what I do with my champion fighter cause the roller here didn’t factor in the improved critical.
And the character sheet does factor in improved critical? I thought it was the other way around. I just tried and when I roll on the character sheet a 19 it doesn't automatically up the damage. On the other hand here I can do that.

And the character sheet does factor in improved critical? I thought it was the other way around. I just tried and when I roll on the character sheet a 19 it doesn't automatically up the damage. On the other hand here I can do that.
No, it doesn’t. If I roll a 19 I just use the custom die roller to roll the extra damage. How do you do it here?

For example a Half Orc Champion Maul attack. In the character sheet that would be a nightmare (imho) but here you can adjust the dice roller easily enough (let's say they crit with a hit roll of 2 or better):
