No. A grapple can only replace an attack when taken as part of the Attack Action, but an AoO, by default, is simply a "melee Weapon Attack". The only way to possibly accomplish something like that is to ready a grapple as an action, or if there's a feat or class feature I'm not aware of that modifies your AoO in some way (similar to how Warcaster gives the option of spellcasting as an AoO)
I think someone tried to point at grapple when they were defending something else that wasn't the attack allowed as an AoO in a recent thread. Nope, not according to RAW.
Edit: I think I may have mis-remembered the exact details. Maybe it wasn't AoO, but it was similar.
It's not just the SAC, the first sentences describing grapple and shove as options specifically mentions requiring the attack action:
When you want to grab a creature or wrestle with it, you can use the Attack action to make a special melee attack, a grapple. If you’re able to make multiple attacks with the Attack action, this attack replaces one of them.
Using the Attack action, you can make a special melee attack to shove a creature, either to knock it prone or push it away from you. If you’re able to make multiple attacks with the Attack action, this attack replaces one of them.

SAC says no. A bit boring IMO but I can see how it might be a too strong option to allow it.
