This may seem like an odd question... But I often see the fact that there are ton of creatures with fire immunity brought up whenever the power of fire based abilities is discussed. Recently this is left me wondering what people who have more experience playing the game than I do, think of this issue is actual gameplay.
This is obviously gonna come down to the individual dm/game in the end, but how often do you guys actually find your yourself encountering fire immune enemies? Does the frequency increase as you level up? Is it merely a case of "If you go to face demons/devils ect they're all gonna be fire immune", or is the fire immunity spread across most kinds of enemies you'll face at higher levels.
In my campaign, currently at lvl 9, I believe we've only faced a single fire immune enemy (An iron golem), but then again we don't actually have a lot of combat in general, so I don't feel like have a very good impression.
Immunity? Very rarely. Resistance? All the time. That being said, I seem to see cold/lightning resistance just as often and poison resistance/immunity more than anything else.

You faced an iron golem at level 9 and you're still alive to talk about it? Respect.
Actually we faced it at lvl 8 ^^.. Myself and the druid used our spells to keep it at a safe distance with dex targeting control spells (I sorta figured a big lumbering golem would have low dex), and then we gradually whittled it down.. Our DM intended us to run from it, but I thought the challenge was interesting.
It depends on what book, season, module, or homebrew you are playing. The Arcana Spell casters in my AL group hated playing season 9 descent into Avernus.

A little bit of both of these. The overwhelming majority of monsters with fire immunity are fiends, fire elementals, and the occasional red dragon.
That said, the overwhelming majority of high leveled challenges you face tend to be undead, fiends or monstrosities, so that does kind of skew results a bit towards fire immunity being a real concern as you go up in level. At least, that's been my experience and what others have said to me, so take that with a grain of salt.
It really depends on the campaign you are running. In the last one I ran half of the campaign was in a mega-dungeon (a ruined city inside a volcanic mountain), so practically everything had fire resistance or immunity. fiend or elemental heavy campaigns probably have a fair share of them too. But others may have little to no encounter with fire immune creatures
I’ve been playing D&D for years and I’ve only faced a handful of creatures that were immune to fire damage. I have however faced a lot that were resistant to it!
Fire Giants were the biggest challenge. Those things are nasty!
