Might be better to figure out what abilities you're actually looking to have. Monk MCs fairly poorly and really does not combine well at all with a CHA primary class.
I would say monk as I believe fighters with the fighting style still don't get to bonus action or flurry of blows for more attacks with their bonus action do they? Though I suppose eventually at really high levels they get more actual attacks per action than a monk does.
What do you want to do with the multiclassing? What do you hope to get out of sorc or warlock what will complement your hand to hand fighting focus?
RAW it doesn't really work but speak to your DM and you might be able ot agree something, obvious things that come to mind is allowing a paladin to get the unarmed fighting style. It could also work with a swords bard but you would really want ot be able to use a dex mod on your unarmed attacks for that.
Why are you wanting Warlock or Sorcerer? If you are wanting some form of spellcasting ability you would be better off with a wsdom based class (Cleric is the best option)
You could get a race that has unarmed attack (e.g. Leonin, Tabaxi, or Lizardfolk) and then go pure sorcer or warlock, but you would then really be mainly a spellxaster who can do unarmed attacks rather than the other way round, expecially as you would probably stuggle to have a decent strength.
I need help I want to make a character who primarily uses unarmed attacks but will be able to multiclass to a sorcerer or warlock
What do you mean by "primarily uses unarmed attacks"?
Monk + Charisma is too MAD to function, since that's 4 stats you need, but you can reduce it to 3 by settling for Fighter, Moon Druid, or Armorer Artificer. Fighters aren't particularly good at this, though - the unarmed fighting style can't keep up with relying on a weapon.
Armorer Artificer would work fine, depending on what you want sorc/lock for - lean into INT and CON, with enough CHA for the multiclassing. You'll punch people and sling spells.
Moon Druid lets you wrap back to Monk, if you want it to - Moon Druids don't really need their own statline for anything, and Moon Druid/Monk is a popular combo. You'll discover on your own how challenging it is balancing what you want there - more Druid for better shapes for longer, more Monk for more ki, etc. Moon Druid/Fighter can also work - some styles, including Unarmed, work in beast form since they're not dependent on armor or weapons. Point is, Moon Druids only need Wisdom to multiclass out and Charisma to multiclass in to what you want, which is SAD enough to do anything you like.
So I'd recommend Armorer or Moon Druid, depending on what else you have in mind. Assuming that satisfies your desire for unarmed combat.

If you want the best (or even a really good) hand to hand fighter, it’s really not going to combo well with sorcerer or warlock. If your DM makes some allowances it can work, but that’s not a given and “can work” might still not be acceptable to you. Keep in mind that hand to hand is not a terribly efficient specialization to begin with: monks are arguably the best at it, and their edge comes from getting in and out fast and applying some control to the battlefield rather than from being sluggers (they also lose steam fast when multiclassing out of monk - Martial Arts and Ki scale with monk level, not character level, and you’ll want lvl 6 at minimum for the ki-empowered strikes; in a lot of campaigns that doesn’t leave a whole lot of levels for another class). It’s a bit of a shame really, I really like the sorcerer-monk archetype. Played one way back in 3rd edition: mechanically also not great back then, but doable and a lot better than what 5E allows.
If you want a character that’s at least part sorcerer or warlock, can hold its own in hand to hand and is mechanically sound, Sorcadin is a common multiclass choice that while definitely not optimal in hand to hand will at least not be useless either.
If you want a character that’s great in hand to hand and has a bit of magic, there’s the Way of the Four Elements monk and possibly a feat that gives some spells and/or a race with innate spellcasting. Four Elements is pretty challenging to get turnt but it’s an option.
So in short I’ll echo Jegpeg and ask what it is you’re looking for from those sorcerer or warlock levels, as well as how many of those you’re at minimum looking for.

You could take a fighter dip for the Unarmed fighting style, but then you run into questions of whether Green Flame Blade or Booming Blade work with unarmed, and you would need to commit a lot of levels to fighter of you ever wanted multiattack.

Probably either monk or fighter with the Unarmed Fighting style.
