So there are apparently 30 races "from other books" in the new book that is coming out, according to the thread where it was discussed a while ago. I'd assume that they are in some way modified, rather than just straight copies.
Which races do you think they will have in there? Or, seeing as the list is probably shorter, which ones won't be? Any thoughts on what kinds of changes there will be?

Too soon to tell, but seems like PHB and Volo's races would be a good bet. Alternate campaign settings races, like Ebberon, Wildemount, or Ravnica, probably not so much. And I think we are getting a clearer picture of where they are heading so weed out some "cultural" traits, everyone gets a +2/+1 or three +1's to place as you see fit.
I haven't been following it closely, but the last few race/lineage UA seems to be what we will see.
Yeah, pretty much any race/lineage published post Tasha's (Gothlines [TM-Midnightplat], the WBtW, Fizban's and Strixhaven's alleged Owlfolk) is refflective of DnD's "evolution". I see MMM presenting updates to PHB, Volo's, MToF, Genasi and that Elemental Evil players guide ... and not Eberron and Ravinica or Theros ... though I could see Minotaurs and Satyr's being setting agnostic enough to make the cut. Changelings and Shifters, no. Not sure about Tortles, probably..
For the heck of it: PHB : 9 + Elemental Evil : 3 + MToF : 12 + MToF : ~6* comes to 30. *Gith, Drow, Duergar, Deep Gnomes, Eladrin and "broad elves". I've seen a few folks spreadsheet it out and come to this read too.
FWIW whatever "other thread" OP is citing, it's not only apparent or indicative from that. You can watch the video yourself and see them talk about how MMM is going to present 30 races from prior books update to reflect the evolution of D&D. There's a very easy way to interpret that, and then there are folks trying to contort the statement. Both are speculation but the former interpretation seems more grounded.

Since it's called "Monsters of the Multiverse," I'd think that alternate campaign setting races are especially likely.

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.

They actually said "setting agnostic" in describing the races when they unveiled the boxed set at Celebration. The book isn't a tour of specific places, the book's main function is to describe monsters that can be found "anywhere" in the 5e multiverse (again, setting agnostic). The book's showing a bunch of "old stand by" monsters to exhibit the new formatting of stat blocks and entry alphabetization, as well as taking a bunch of setting agnostic PC races and bringing them in line with the "evolution" of 5e, which to me means Tasha's since the book will be available bundled with that before its available on its own.

Minotaurs are going to show up in the all-but-confirmed Dragonlance sourcebook, I'm sure. They might get picked up for M³ already as well, but we'll be seeing them again regardless.

Because of the emphasis on updated player races there probably wont be any new ones, sadly. I'd have hoped for playable Giff or more alien kind of races.

I'm expecting the recent UA with Giff in it to have been for the MMM book, so Giff are on the table, even though their UA abilities are a sharp departure from their NPC statblock. I'm looking forward to Thri-Kreen, although I'm mystified why they're monstrosities when NPC Thri-Kreen are humanoids.

WotC did say that they were shifting monsters around a bit to be in different types. I would imagine that Thri-kreen is an example of that relabeling.

I hope so. I like the plasmoid race in that and am hoping to see it made official.
The question I need the answer to is if the races will be updated in DNDBeyond, and/or if the book will be available here.
It's weird that it was announced before the Crit Role book, comes out in a month and 10 days, but there's no preorder option and it seems like they haven't even mentioned it on the dev update.

Yeah, it may change for a proper source book, but I like the idea that there could be more non-humanoid player races.
