I'm currently attempting to make a homebrew longbow that deals 2d8 damage on a hit instead of the usual 1d8. I've found that using the replace damage type modifier to do so will not show this change in character sheets.
Replace damage type isn't intended to allow you/us to change damage dice, just the type of damage (e.g. radiant instead of piercing). As far as I know, it is not currently possible to change damage dice in the homebrew editor. It is an oft-requested feature, and I hope that eventually it will be available. At some point they are planning on completely revamping the homebrew tools.
Given that it is on the planned/longer term list on the public road map, and given the number of things on the 'upcoming/short term' list, I don't expect the homebrew revamp to happen this year.

You can use the damage modifier to add damage, but it will be listed separately and only visible if you click the weapon.
The easiest solution will probably be to use the custom actions to make the longbow, if it is mundane equipment (not magical)
