I recently picked up Xanathar's guide to everything and the Kensai monk looked appealing. That said, I was also intrigued with the Samurai Fighter subtype. Ideally in minor comparison they look like they would compliment each other, or should I be lead away with these thoughts?
As for Race, I would mainly like to use Dragonborn as a base for this idea.
Feats, I would like to use Dragon Hide if that can stack with the Monk's Unarmored Defense. If not for the possible AC Boost, if this will help with the Unarmed/Natural Weapon option.

There's not much to go on, to offer you feedback really - do you have a character idea in mind?
Partially, but if the AC boost doesn't help then the idea won't matter. That and taking Monk kinda makes the natural weapon part of the feat pointless. (Unless you want the option to switch between Bludgeoning or Slashing). The other thing was Multi-classing into Samurai Fighter. Was trying to make a fighter that didn't need to rely on armor (Item wise).
So what is the point of the Dragon Hide feat at this point?

Dragon Hide gives you a base of AC: 13 + dex modifier.
That's better than Studded Leather and as good as a Chain Shirt so is great for character classes that don't rely on physical armour.
Consider a Sorcerer or Wizard - they're getting extra AC they likely wouldn't have. A Rogue is getting built-in armour they don't have to wear, when infiltrating somewhere etc.
It's not always about stacking things to get large numbers - this is something that 5th edition D&D tries to prevent. :)
If you're interested in a fighter that doesn't wear armour, then I suggest a Barbarian or Monk - they both have abilities that increase their unarmoured AC a decent amount.
I've made a Druid/Monk. It's currently 2 levels of moon druid and 3 levels of shadow monk. I like it because a lot of the monk feature aside from martial arts still work in wild shape. The unarmored defense boosts your wild shape AC, you can slow fall, shadow step, stunning strike, extra attack, etc. You just can't unarmed strike or flurry of blows. Also, if you want to turn into a form that doesn't have darkvision, you can cast darkvision using ki points, and then bonus action shift.
Another pretty straight forward build would be to dip into rogue just enough to get those sneak attack damage dice. Then you wait for your tank to lock in place with the problem, walk up, flurry of blows, and watch it melt. It's nowhere near as neat as Sil's suggestion, but it can be pretty disgusting dps.
EDIT - OH! Also, going into some draconic blood sorcerer could be really good for the "you can't touch me" aspect you're wanting. 13+Dex base AC (if you wanna ditch the need for high Wis), then you take the Shield spell and call it a day. "Oh it hit me? Nah." And if you wanna dip a bit further, you could get some sorcery points to spend on gaining an elemental resistance too for better tanking. This would combo pretty well with most any monk tradition, but I really like the idea of sun soul or shadow.

We're partway through an evil mini-campaign (won't call it a one shot as we are three session in!)
I went with deep gnome monk of the long death, with three levels of ranger (gloomstalker) so get the extra attack on first turn of combat, and umbral sight (extra 30' of darkvision which takes me up to 150' and when in darkness am invisible to creatures that rely on darkvision). For flavour (it is an evil campaign after all), I am a natural born WereRat, with the immunities and traits of that beastie.
