Let me start by saying that I love Tasha's. I love the new subclasses (me and my group usually don't touch UA), I enjoy alot of the new spells, and I'm glad that a reprint of Artificer was included as well. One thing that really stood out to me that I liked was alot of the new options they added for both Fighting Styles and Maneuvers. They add a whole new layer of customization (especially for the Battle Master fighter). Plus its really cool to see Warlocks get a new semi-defensive Pact Boon option (along with new invocations)..
Seeing it though makes me wish that a few other subclasses had gotten a similar boost. Specifically, I think that the Totem Warrior barbarian and Way of the Four Elements monk could have benefited from expanding on the options available to them.
For Totem Warrior, Tasha's could have featured a reprint of the options from SCAG as well as toss in one or two new ones for flavor, perhaps giving the bear totem build a run for its money.
For Way of the Four Elements, adding more elemental disciplines that weren't just spellcasting could have gone a long way in making the subclass abilities feel unique and versatile. When paired with the Ki-Empowered Strike feature, I think a few low-ki cost options could have been enough to bring the subclass out of dismay.
Are there any other classes/subclasses from the PHB that you wish could have seen an expansion on options available to them?

They will only release a certain amount of content per book. The good news is that Class Feature Variants are now on the table for future books, as are subclass reworks. Although I don't have high hopes for Four Elements. Ki-empowered Strikes was a boost, but it really will never be up to par with Eldritch Knight/Arcane Trickster as long as it has to use base-class resources for 100% of its subclass features.

True, but they could have these books be as long as the adventure books and put more content in it.

I don't know if they are going to do more class feature variants after this book. I hope they do, but there's nothing to suggest that they're going to do this in future books. The changes to the Bladesinger and Beast Master are very constructive to this edition, as it shows that WotC finally decided that changing content in the PHB and other sourcebooks is allowed to happen.

I would just give them spell slots like an Eldritch Knight or Arcane Trickster. There's no mechanical reason not to.
I don't have high hopes for the Artificer class, as any future XGtE 3.0 book or setting book that would want a new subclass for the artificer class would need to reprint at least the base class and infusions. It's really disappointing, IMO. They could fix this issue by doing a massive errata to the PHB to add the Artificer class, but that would open up a whole can of worms that I don't think WotC is willing to open.

I’m not entirely surprised there wasn’t more attention for Wizard subclasses. There are already 11 of them, 13 if you count the two in the Wildemount book, and the majority of them are at minimum solid. Sorcerers only have 7 (of which only Storm Sorcery is a bit of a disappointment to me, admittedly). Any additional content would have been nice, but personally I would just have liked Monks and Sorcerers in particular to have gotten a bit more TLC, Ranger-style. Maybe Fighter too, but the extra Fighting Styles were a nudge in the right direction for them at least. More of this and more of that is great, but it typically doesn’t really do much for base classes and my Monk and Sorcerer misgivings have little to do with their options - it’s really more the base concept that lets them down. But I guess the squeeky wheel gets the grease, and for 5th edition that was the Ranger first and foremost apparently.

There's currently more subclasses for Clerics than for any other class in the game, and most of them are good. Sorcerers definitely need more subclasses, but that isn't an excuse for giving less subclasses to Wizards, it's an excuse for giving more subclasses to sorcerers. I really wish that they wouldn't have counted the reprints for the subclass parts of the book, but it is what it is.
I definitely want Wizards and Clerics to get more subclasses, but at a slower rate than Paladins, Artificers, Sorcerers, Warlocks, Rangers, and the other classes that need to catch up with them.

But honestly I was just a little disappointed by the DM tools section. It's my personal opinion that the main problem with the ranger is that exploration is super undeveloped in 5e, while social encounters have no mechanical meat of which to speak. That and they've taken all that's cool from a ranger and given it to the rogue.
For subclasses I mostly agree with the OP. I don't need to see any more, but I would like to see a more active approach to them, including the berserker (whose main ability is functionally unusable). However, since D&D isn't a video game, they can't just hotfix the gazillions of books that have already been printed.
Clerics have one (1) more than Wizards do. Sure, more is better for everyone but when a class has exactly half as many subclasses as the Cleric sitting pretty at 14 I think that justifies getting moved to the front of the line. ;-) Maybe that’s just me though, and besides, the dearth of subclasses isn’t really the Sorcerer’s biggest worry (not after Tasha’s anyway). I was simply hoping for a touch more correcting rather than expanding, that’s all. WotC may have different ideas about what could use a RAW nudge, however.

The Ranger’s exploration abilities have very little significant impact, is my main issue with it. Being proficient in Survival and having a decent Wisdom stat can already carry you pretty far without having a Ranger along, and travel preparation or magic can take that a lot further still. I don’t think exploration is really that underdeveloped, it’s more that it’s something a lot of other classes can do acceptably well too.

Honestly, Clerics deserve more subclasses than Wizards due to the sheer amount of different deities and domains that could be released. I want a River domain to come out sometime soon because Rivers were a crucial part of many early civilizations and therefore many deities are dedicated to them. Wizard subclasses, on the other hand, are less rooted in things that have direct real-life parallels, and more in magic. We should get more Wizard subclasses, but I feel in the end Cleric needs more.

There's so much I wish would have been expanded on that I couldn't possibly put it all in one post. Here are some of the main ones:
Please check out my homebrew, I would appreciate feedback:
Spells, Monsters, Subclasses, Races, Arcknight Class, Occultist Class, World, Enigmatic Esoterica forms
They really should have called it Tasha's Cauldron of Some Things
"Tasha's Cauldron of Fewer Things Than Xanathar's"
Please check out my homebrew, I would appreciate feedback:
Spells, Monsters, Subclasses, Races, Arcknight Class, Occultist Class, World, Enigmatic Esoterica forms
^ Fewer
Sorry, had to be said.

My homebrew subclasses (full list here)
(Artificer) Swordmage | Glasswright | (Barbarian) Path of the Savage Embrace
(Bard) College of Dance | (Fighter) Warlord | Cannoneer
(Monk) Way of the Elements | (Ranger) Blade Dancer
(Rogue) DaggerMaster | Inquisitor | (Sorcerer) Riftwalker | Spellfist
(Warlock) The Swarm
